When I saw your tag for "carrot pie" I was so bewildered for 2 seconds before remembering us Pakistanis also make halwa out of seasonal red carrots so yeah that totally slaps actually!!! This isn't a question but now I'm wondering what carrot pie is like!
I'm not personally familiar with carrot halwa, though I looooove regular halva!!
It's a custard pie, so the filling is about half egg yolks and half steamed, mashed carrot. Plus cardamom, butter and sugar. It's similar to a cross between a pumpkin pie and flan, especially since I like to put a honey glaze on top, similar to flan's caramel.
I'm trying to find a decent recipe online but google is failing me, so I'll probably have to write it out next time I make one!

Gajar ka Halwa 🤤
 Carrots: I cannot emphasize how important red carrots are in a delicious gajar halwa. I completely understand if you can't locate them in the US (I was lucky this year), but if you can, you must try the red carrot halwa.
I assure you will never return to the orange ones.
milk:Whole milk is required for this dish. It provides richness and flavor to the halwa.
Because we heat the milk until the solids remain, you should absolutely use whole milk because it has more fat. 
The amount of milk required for 1 kilogram of carrot might range from 1 liter to 1.5 liters. My mother used one liter, whereas my mother-in-law used 1.5 liters. The only difference between the two is that the 1.5 liter version produces more milk solids. They also have the same flavor.
sugar: I used granulated white sugar in this recipe. Because red carrots are naturally sweet, the amount of sugar can be adjusted to taste.
You may add 1 cup to 1.5 cups sugar (200 grams to 300 grams) to 1 kilogram carrots. It actually depends on personal preference; 200 grams is on the lighter side, and I prefer somewhere around the middle.
Ghee: As previously said, my mother occasionally cooked this halwa without ghee and it was still delicious. However, ghee enhances the flavor and makes it more delicious. I highly recommend adding a little ghee to the halwa and roasting it for a few minutes in ghee.
You may always reduce the amount and use very little of it, but utilize it anyway. On the other hand, if you want, you may add a couple of teaspoons additional.
Cardamom: gives the halwa a beautiful scent. I like crushing fresh cardamom powder in my spice grinder since it tastes so much better.
However, you may use store-bought cardamom powder instead.
Nuts and Raisins: I always top my halwa with nuts and raisins. However, I know many individuals who dislike them, so it is optional. I like to add cashews, almonds, and golden raisins. 
You can include all or none; everything is optional.
