Coronation Chicken Sandwiches
No Platinum Jubilee High Tea would be complete without Coronation Chicken, thus I made these Coronation Chicken Sandwiches --made lighter with sour cream and fresh mango-- to celebrate Her Majesty’s seventy-year-long reign!
Ingredients (makes 4 sandwiches):
1 tablespoon olive oil
160 grams/ ounces chicken breast
1/2 teaspoon salt
1/2 teaspoon freshly cracked black pepper
1/4 teaspoon Red Chili Flakes
1 1/2 heaped tablespoon sour cream
1 heaped tablespoon Mayonnaise
1 heaped tablespoon Mango Chutney
1/2 teaspoon Garam Masala spices
1/2 teaspoon ground ginger
1/2 teaspoon ground tumeric
2 sprigs freshly picked Garden Cilantro
1/2 small lime
1/4 small, ripe mango
4 small whole-wheat baps
The day before, heat olive oil in a medium skillet over medium-high heat.
Cut chicken breasts into large chunks; and season with salt, black pepper, and Red Chili Flakes, rubbing the seasoning well into the flesh. Once the oil is hot, add chicken chunks to the skillet, and cook, until cooked through and golden brown on all sides, about 4 minutes on each side. Remove from the heat and let cool completely at room temperature.
In a medium bowl, combine sour cream, Mayonnaise, Mango Chutney, Garam Masala spices, ground ginger and ground tumeric.
Finely chop Garden Cilantro, and add to the bowl as well. Thoroughly squeeze in the juice of the lime halve. Give a good stir until perfectly blended.
Once cooled, cut chicken chunks into thin slices, and stir into the sauce, coating well. Cover with cling film, and chill overnight in the refrigerator.
The next day, peel mango quarter, and cut into thin slices. Cut whole-wheat baps in half. Generously spoon coronation chicken mixture onto bap bottoms. Spread any remaining sauce onto the bap tops. Arrange fresh mango slices onto the chicken, and gently press bap tops on, to close sandwiches.
Chill in the refrigerator until serving time.
Serve Coronation Chicken Sandwiches with a pot of piping hot tea, and an assortment of other sandwiches and treats, fit for a Platinum Jubilee High Tea!
