We each took the Aged Prime Rib of Beef which was carved from a slow roasted boneless beef ribeye. Served with crispy potato croquette, broccoli and horseradish au jus. The large slice of beef covered much of the plate and was a nice even pink. So adeptly aged that the beef was full of beefy flavours and remarkably tender. Nothing to find fault on the meat except for the croquette which was soaking in the sauce as it had been tucked underneath the beef.

My velvety Royal Cheesecake with a red raspberry sitting atop a dollop of fresh cream flower. Creamy with a definite tangy taste to it, the single raspberry added a splash of colour as well as acidity to the rich dessert. The biscuit crust below gave it texture and I was hoping to end the dinner with a high note until the next dessert was served.

And then this Dark Chocolate Brownie came and spoil my day. It was basically all meringue with some brownie crumbles thrown in plus no caramel sauce at all. Another one of my colleague on the trip before us said she ordered chocolate brownie from the kids menu and it came in one whole piece. This one was just like a deconstructed brownie except that the brownie wasn’t the main focus.

Ribeye Roast {Boneless Prime Rib}
Here's a recipe for a delicious boneless ribeye roast, also known as prime rib:

Ingredients:
1 (4-6 lb.) boneless ribeye roast
4 cloves of garlic, minced
1 tablespoon of kosher salt
1 tablespoon of freshly ground black pepper
1 tablespoon of fresh rosemary, chopped
1 tablespoon of fresh thyme, chopped
2 tablespoons of olive oil

Instructions:
Take the ribeye roast out of the refrigerator and allow it to come to room temperature for about 2 hours before cooking.
Preheat the oven to 450°F.
In a small bowl, mix together the minced garlic, kosher salt, black pepper, rosemary, thyme, and olive oil until it forms a paste.
Rub the paste all over the surface of the ribeye roast, making sure to get it in all the nooks and crannies.
Place the roast on a roasting rack in a roasting pan, with the fat side facing up.
Roast the ribeye for 15 minutes at 450°F, then reduce the oven temperature to 325°F and continue cooking for about 15-20 minutes per pound for medium-rare doneness.
Use a meat thermometer to check the internal temperature of the roast. When the internal temperature reaches 130°F, remove the roast from the oven and let it rest for at least 15 minutes before carving.
Carve the roast into thick slices and serve with your favorite sides.

Awkward. Standing there, mad. Lexi shredding bacon. Putting rolls into oven. People trickle in. Don’t know anyone. Christmas w/strangers. Never again, I think.
