How People think Laurie acted after Jo's rejection: Oh no! What am I going to do without Jo?! 😭😭😭 She's the love of my life. I loveeeee her...well I guess there's her annoying sister Amy, I guess I have to settle down and fix my broken heart. At least I'll be close to Jo 😭😭😭.
How Laurie (from the books) really acted: Oh no Jo rejected me...oh look there's Amy she looks so beautiful... what no. I need to cry for Jo...but I didn't know how much I missed Amy. thinks in Amy ... Laurie stop it You're in love with Jo... I'm supposed to stay here only for a few days but I stayed a whole month because being with Amy is so fun...no!!! I'm supposed to be sad... sad about whom? How was her name...why is Amy dancing with everyone but me 😭😭😭😭...I hate my childhood friend Fred suddenly like why does he exist?!!! 😑😑😑...oh right Jo!!!... I love her. Yes ...why I am not sad about her??!! I'm supposed to be heartbroken. I'm not this shallow. I'll proposed to Jo again and marry her even if I am miserable for the rest of my life before admitting my feelings weren't that deep and she was right....wait. why does Amy despise me 😭😭😭😭😭😭....writes an opera with a female lead exactly like Amy...Beth died, even though I'm closer to everyone else I'm going to travel across Europe and be there for Amy even if she despise me 😭😭😭. She needs me. Poor her.... wait do I love Amy?... how is this possible??...I wish we always pull the same boat, will you, Amy?.🥰🥰🥰

Reading why Louisa didn't write more about Amy is understandable. What do you think she'd write if May would've lived?
Interesting question!
I would actually love to know what others think about this question.
This is all speculation. But I think she might have gone more in-depth into Amy's role as an art teacher. Louisa and May lived together in Boston, and I believe that's where she taught female students, so she could have known how May taught. Bronson and John also adapted a little house they had next to Orchard to make it a studio for May where she taught when she had to go back home.
Maybe she would have written more about Bess and Dan's story from AmyxLaurie's pov. Maybe a little bit more about the plans they had for their only daughter, a discussion about Dan's infatuation.
I think she would have spent more time talking about whatever happened in Parnassus.

If I had a nickle for everytime I've seen Timmy C marrying Florence P even tho he is in love with someone else I'd have two nickles which isn't a lot, but it's weird that it happened twice.

So Willy Wonka, who is Poe Dameron's son and is in love with Mary Jane Watson, fights Elvis Presley for world domination? And all of this happens IN SPACE? Sounds mad, I'm in!
Edit: Amy March married Laurie again. This time for political reasons

Laurie looks at her, really looks at her, for the first time, not sure of what he’s feeling.

“Amy turns around to get one last look at Laurie. She loves him, as she’s always loved him.”
“She suddenly blushes, but smiles in thanks. And then runs off to greet Fred. From the top of the staircase, Laurie looks at her and Fred embrace, not sure of what he’s feeling.”

Things that lLittle Women 2019 got wrong (Ofc Amy and Laurie related):
First of all, let me clarify that I LOVE Little Women 2019. It's my favorite version of all time, specially bc it's the first time someone tried to give justice to Amy and Laurie storyline, however this version still fell short in some ways, that I hate and just help to perpetuate the long false story of "Laurie settled down with Amy":
Laurie and Amy meeting in Europe: In the movie Amy is the one who sees Laurie and jumps after him. She is the one who was hoping for him to find her at the hotel. Also after they stop talking Laurie returns to his sad walking.
In the book this never happened. Actually It's Laurie the one who comes back to life after he sees Amy. He is the one who starts waving his hat aggressively hoping for Amy to notice him:
"The quick trot of ponies' feet made him look up, as one of the little carriages, containing a single lady, came rapidly down the street. The lady was young, blonde, and dressed in blue. He stared a minute, then his whole face woke up, and, waving his hat like a boy, he hurried forward to meet her."
He is the one who claims that he couldn't find them and care about it, because Amy never asked and he started talking about it:
Amy: "How is your grandfather? When did you come? Where are you staying?"
Laurie: "Very well—last night—at the Chauvain. I called at your hotel, but you were all out."
(Like my boy nobody cares and she didn't ask you if you looked for her or not 😭😭😭)
In fact He stayed with her that afternoon helping her with everything she had to do that day meanwhile thinking how much she changed and how gorgeous she is:
"Laurie did not read all this while he watched her feed the peacocks, but he saw enough to satisfy and interest him, and carried away a pretty little picture of a bright-faced girl standing in the sunshine, which brought out the soft hue of her dress, the fresh color of her cheeks, the golden gloss of her hair, and made her a prominent figure in the pleasant scene"
So there wasn't no coming back to sad moment after he saw her. My boy was too intrigued for that. Please and thank you.

Amy and Laurie were good but Jo losing her Teddy is one of the most heartbreaking things to ever happen in literature. Because it isn't just that she didn't love him and he wanted to marry her. It's that they loved each other too much and not in the same way, and grief of losing him was just a culmination of losing everything else, and growing up into something that is unfamiliar and being alone.
And it's just tough to think that one day somebody you thought would be around forever might still be around but it isn't for you. And that sometimes it is ultimately the love that you have for each other that breaks you apart. And that your sister won't always be sleeping across the hall from you. And there will eventually be a last day where all of your friends gather together as kids. And sometimes something that you dreamed about your whole childhood isn't something that ends up being for you. And sometimes no matter what we do to stop it, things and people and places will leave our lives anyway, and the trick is learning how to be okay with that, eventually.
(based off a conversation that @es-3 and i had the other day that i did NOT cry after)

I've seen five different film adaptations and watched a ton of video essays comparing them, but it wasn't until finally reading Little Women for myself now that I learn... Jo was actively shipping Laurie with all three of her sisters.
Before Meg marries John, Jo says that she was hoping Meg and Laurie would get married.
After the twins are born, and before she goes to New York, she thinks Beth is in love with him and she decides they would be good together. She even tells Laurie to stop flirting with women he doesn't really like and turn his attention to one he actually respects, and she means Beth.
And then, some time after she rejects his proposal, she and Beth are talking about how he and Amy are actually perfectly suited for one another. And this is before he even catches up with Amy in Europe.
