Brownie Bites

Ingredients
1/2 cup all purpose flour
1/4 cup unsweetened cocoa powder
3 tbsp unsalted butter
6 tbsp white sugar
1/4 cup milk
(opt.) 1/4 cup cosmic sprinkles or mini chocolate chips
Instructions
1. Microwave the flour in three or four 30-second increments, stirring between each one. Give it a mix and let it cool.
2. Melt the butter
3. Add all of the ingredients to the bowl of flour and mix to form a dough.
4. Add the sprinkles and chocolate chips and fold into the dough.
5. Enjoy immediately or chill in the refrigerator.

Insta Melt in the middle Molten Lava Cake
Chef's note: okay, that is really sweet, and pretty nice to eat. I just am having a bitch of a time getting the cook time right. If you under bake, it is a lava pile. Same flavors, just not that picture-esque cake. But the cake and the molten center are both so tasty with texture being a distinctive part of each one. Small crunch on the outside, cakey texture on the outside, and ooey gooey richness in the middle.
This may work better in a smaller ramekin (with a shorter cook time to boot) to have it hold up. However, I only own 4 oz and 14 oz ramekins; I really had no choice but to make a 14 oz large cake. But I stand by these flavors none the less.

Ingredients
5.5 tbsp chocolate chip
4 tbsp unsalted butter
6 tbsp powdered sugar
1 egg
1 egg yolk
3 tbsp all purpose flour
1 tsp unsweetened cocoa powder
Instructions
0. Preheat oven to 350°F
1. Grease one 14 oz ramekin with butter. Dust with cocoa powder and set aside
2. Add chocolate chips and butter to a bowl. Microwave in 20 second bursts, stirring after each heat, until melted and smooth.
3. Add powdered sugar to melted chocolate. Mix until combined
4. Mix in egg and egg yolk
5. Add plain flour and cocoa powder. Stir until just combined
6. Spoon the mix into the prepared ramekin
7. Bake for 25 to 28 minutes
i did full 28, but i wonder if 25 would still hold up and have more gooeyness
8. Let it stand in ramekin for 5 minutes
your cake will deflate. this is expected b/c of the gooey center
9. Invert onto a plate and optionally dust with powdered sugar (it’s sweet enough as is)
