Spicy Sweet Shrimp and Water Chestnut
One of my go-to proteins, shrimp, is excellent for a quick weeknight supper and makes it simple to make midweek dinners in a pinch. The quick preparation methods for shrimp include boiling, roasting, grilling, and pan-frying. My ideal way to prepare them is as a quick evening supper, like this spicy sweet shrimp and water chestnut dish. A dash of chili heat has been added to liven up the sauce.

I’ve been lucky enough to have taste-tested their creations for a few years now as they worked to perfect their Asian-inspired flavors, and last week they rolled out the first releases at a launch party for Lunar New Year, appropriately timed to the Year of the Rabbit!

I’m biased, of course, but think all their flavors are fantastic, Bobo ChaCha being a personal favorite. Early versions of GoGoMa and Hanoi Joe were truly tasty, but they ran out of pints last week before I could sample the final batches. Soon!

I just made carbonara with prawn and I thought it was delicious, so here's a recipe (note that I literally just made this on my own, so ORIGINAL RECIPE YOOOOOOOO):
Prawn Pasta Carbonara
Ingredients:
Pasta of choice
Salt
Oil of choice
4 pieces of prawn, shell intact
1/2 shallot, diced
1 clove of garlic, thinly sliced
1 tsp butter
Hard cheese e.g. parmesan, fresh
1 egg
6-8 cherry tomatoes, cut half
1/3 chicken bouillon cube (or about 3/4 tsp of powdered bouillon)
1/2 tsp lemon juice
Dried basil
Szechuan pepper, coarsely grounded
Steps:
Boil some water and cook that pasta with salt and a dash of oil.
Take your shelled prawns and mix with some oil, salt and Szechuan pepper.
In a medium-hot oiled pan, place your prawns and cook till it's orange with a hint of dark. Remove from the pan.
Add shallot and garlic, and a bit of water from your boiling pasta pot. Then, add butter. Cook until slightly brown (which is like a few seconds).
Add cherry tomatoes, basil, more Szechuan pepper, lemon juice and chicken bouillon. Stir to cook.
Your pasta should be done by now. Remove from heat, then add the pasta into the pan with some of its water. Cook till the remaining water starts simmering, then turn it off.
While the pan is cooling, in a bowl, crack an egg and grate some parmesan cheese into it. Mix thoroughly.
Add egg-cheese mixture into the slightly-cooled-but-still-warm pan. Mix till homogeneous.
You can re-add your prawns here and mix with the sauce, or add them later on the plate.
Serve!

NOTE TO SELF: Ran back this meal from August of '22 -- minus sesame seed chicken -- and it hit the damned SPOT. My only complaint is the size of the egg drop soup, which I thought was new, but apparently it was the same size a year a half ago.
Currently ranked 1st of two February meals.

It’s my birthday today (May 2) and last Friday was the first of several birthday celebrations. My sweetheart and I went to Grand Szechuan in Bloomington—our favorite Chinese restaurant in the Twin Cities. The food was as good as it always is. Two familiar favorites and something new. We had Country Style Chicken with an intense amount of Szechuan peppercorn, Tofu with Shrimp and Pickled Peppers, and a Sour and Spicy Noodle dish seen on the hand-written card near the front door. Sensational as always!

Szechuan Eggplant With Beef
A delightful balance of spicy and savory, the dish is one of my favorite ways of cooking eggplant. The whole purpose of the spices and ingredients that I use, like star anise, Shaoxing wine, and aromatics like ginger and scallion, is to enhance the inherent flavors of my chosen protein and vegetables. A friend described the food as fresh, vibrant, and aromatic. Mission accomplished, I suppose.

I don't even know how long me and @flavourjourney have been at it but we've been doing a regular transnational snack exchange between the Netherlands and Taiwan for years now. Hands down one of my favorites from these pacakages are these Szechuan spices pea crackers. They have a nice crunchy texture and a really good hit of spice. 100/ 10 would hunt them down to the ends of the earth so I'm glad Yone sends them to me every so often.
I'm not sure if you can get these anywhere outside of Taiwan but I'd be happy to hear it. Now I've just gotta figure out what to send her from France as my supply of Dutch stuff has quite obviously run out. Moving countries will do that to you. Sadly French butter and bread are unlikely to survive the trip.
