Four Cheese Margherita Pizza

Chef’s Note: This was fun to prep. And it tastes good!

Ingredients

2 tbsp olive oil

2 garlic cloves, minced

1/4 tsp salt

2 Roma tomatoes, sliced

1 pre-baked 12-inch pizza crust (I bought pre-made, ready to bake)

1 cup (4 oz) shredded mozzarella cheese

2 ounces shredded Fontina cheese

5 fresh basil leaves, washed, dried

2 tbsp crumbled feta cheese

1 tbsp grated Parmesan cheese

Instructions

0. Slice tomatoes. Mince the garlic

1. Stir together olive oil, garlic, and salt. Toss with tomatoes, and allow to stand for 15 minutes.

2. Preheat oven to 400 degrees F.

3. Brush entire pizza with as much of the tomato marinade as you can get

4. Sprinkle pizza evenly with mozzarella and Fontina.

5. Arrange tomatoes overtop. Sprinkle pizza with shredded basil, Parmesan, and feta cheese.

this will be a lot of tomato, but it’s fine

drizzle over any of the remaining marinade

6. Bake in the preheated oven until the cheese is bubbly and golden brown, about 10 minutes.

bake directly on the oven rack

Greek Veggie Wrap

Chef's Note: I really enjoy the flavors, and it's so easy to make.

Ingredients

1/2 cucumber, finely diced

1 Roma tomato, finely diced

1/2 red onion, finely diced

1/2 cup fresh parsley, diced

10 kalamata olives, diced

2 tbsp lemon juice (~1 lemon)

1/2 tsp sea salt

four 8” (medium) whole wheat tortilla / naan / pita bread

tzatziki

(optional) crumbled feta

Instructions

1. Finely dice cucumber, tomato, red onion, parsley, and olives

2. Add veggies to a bowl. Season with lemon juice and salt. Mix to combine. Drain liquid

3. To your bread, spread the tzatziki sauce over the entire surface

4. Spoon about 1/4 of the diced vegetables on top of it. Top with some feta

This may be a little less than you like, but it’s to keep the wrap from being overfilled when you bite into it
