Requires a programmable pressure cooker. For days when you are low on spoons AND sick AND people need fed.
5 cups vegetables of choice; I use things that I can just dump in or else cut right into the pot with a paring knife; check out pre-chopped onions, celery, etc., in the freezer section at your supermarket
2 frozen boneless skinless chicken breasts
2/3 cup uncooked brown rice or barley
Garlic in whatever form and quantity you want
Poultry herbs–whatever you have and want–rosemary, thyme, savory, sage…
Salt and black or white pepper
1 ½ quarts broth or water
Put in the vegetables, then the chicken, then the rice and seasonings, then the broth.
Set pressure cooker for 12 to 15 minutes on High, depending on size of chicken pieces. Go sit down.
Use the natural release. Go sit down while the valve is shrieking.
Get 2 forks out. Find the chicken pieces and shred them, right in the pot, with the forks.
Stir the soup, and serve. Go sit down.
Mylo slides Sugar's cup down the bar and it curves satisfyingly. Mylo's little sister perks up and he chuckles to himself. Vi can bite him, he's still got it.
"So, Powdered Sugar," he drawls. "You gonna paint these ratty old walls or what?"
Sugar slurps at her drink as she looks at the walls.
"It has to be good." She says around her straw.
Mylo rests a hand on his head as he looks around at The Last Drop. It might actually be nice to put some color in here, make it look like a restaurant and not the bar it once was. Out of the corner of his eyes, Sugar perks up
"I got an idea." She slurps up her juice and gets out of her seat.
"Uhm, hello?" Mylo waves, "Aren't you forgetting something?"
Sugar pauses, her face twisting in confusion. Mylo waits for her to figure it out. Powder haltingly approaches him before planting a kiss on his forehead and running off.
"No! Pay your tab!" He splutters.
[Green onions, top it up with the garlic. That was the most violent -- How far would you run with a piece of lead in your heart. So the next step is we're going to make the chicken. Put it into our pressure cooker, the sofrito.]
