I think... he'd save it first for when he graduates, and then he'd use it to buy his own house with lots of space for his Pokémon both inside and out. He'd get lots and lots of cooking supplies, too! He'd want a very big kitchen, because he loves to cook! And then a lot of stuff to decorate the house in to really make it feel like his own. He's not really interested in a super extravagant lifestyle. But having unlimited cash means he can at least buy what he likes whenever he wants.

Also he'd give money to his friends, too, if they really needed it.
