The third and final of the dishes that I cooked today, a few of these (reheated) will be the first of tomorrow's Festa Alla Cinque Cibi, the appetizer course. I make no claims to authentic Roman Jewish cooking in any of this, but these are perhaps the most hilariously well-sourced and yet non-authentic of the bunch: Burik Con Patata, from a recipe in Portico.
Traditionally these are boiled potato mixed with other savory ingredients, wrapped in a crepe-like pancake and pan fried. The recipe itself says that you can speed up the process by using egg roll wrappers instead of homemade crepes, and I love an egg roll, so I said, "That, I will do that." Also IDK if you guys are aware but there is a not-insignificant relationship between American Jews and American Chinese food around this time of year. :D
Anyway I figured if I was going full egg roll I'd make life easy and use instant mashed potatoes. I'm not sure what it says about me that I feel compelled to add that I did at least use like...the fancy instant mashed potatoes. In any case, I mixed them with sauteed mushrooms and caramelized onions, and it made a spectacular filling for a really delicious dish. Like, this might enter some kind of regular rotation for meals in cucina di copperbadge. Although I'm still working out the best wrapping technique. I'll get there.
Tomorrow I'll be frying an artichoke and slow-cooking a beef stracotto as the "salad" and "main" of my five-course feast. For the rest of today I'm going to put my feet up and watch AS Roma try to topple Juventus, cuddle some cats, do my daily Italian learning in Duolingo, and probably have a few more of these burik for dinner because sono molto molto delizioso.

top 10 things i cooked in 2023
this year i made 104 unique recipes (plus lots of duplicates when i liked something enough to make it multiple times). the places i went to most for recipes were feasting at home + the NYT recipes app, although i very much liked the weekday vegetarians, love and lemons, cookie & kate, nora cooks, and the foodie takes flight.
my top 10, in no particular order:
NYT ricotta pasta with roasted broccoli and crispy chickpeas (super simple but a great yummy pasta to make real quick for friends. I roasted the broccoli instead of broiling and added lots of extra lemon zest, garlic, red pepper flakes, and a tray of oven-roasted chickpeas)
moroccan vegetable tagine (i blended a bunch of recipes but the one linked was my starting point. this is the one form i like butternut squash in lol. modifications: i went heavy on all the spices but especially the cinnamon and cardamom, added chopped dried apricots to the stew for extra sweetness, and threw in a bunch of extra veggies. yum)
indian-ish nachos with cheddar, black beans and chutney (do NOT skip the multiple chutneys and sauces. it will seem like too much work you will say can't i just make one and be done with it but those sauces are where the magic lies. the great tragedy of these nachos is that i wanted to eat them for DAYS but they do not reheat well. but godddd they were good)
ottolenghi's green pancakes with lime butter (these are SO easy. great for brunch but also make delicious additions to your lunch for a couple days after. also it's a perfect way to eat a pound of spinach and feel very virtuous about it when really you just ate delicious jalapeno-y scallion pancakes. the lime butter is great but it's a lot of work so i usually just top these with some sour cream mixed with a lil bit of lime zest & lime juice)
cauliflower shawarma with spicy tahini sauce (YUM! the tahini sauce as written was too bitter for me with the cholula mixed in. i think i'd try it with sriracha next time so it was a little sweeter. i also added chickpeas yum)
roasted cauliflower daal with chickpeas (my notes say this was "OUTTA THIS WORLD DELICIOUS" but also note that it will "really clean you out GI-wise" lol. lentils always have that effect on me though so ymmv. i added bell pepper, roasted the cauliflower first, cooked the lentils most of the way soft in the rice cooker instead of on the stove, and added two chopped serrano peppers with seeds to give it a lil extra kick. i would recommend halving the recipe if you are cooking for one as there were TONS of leftovers and my GI system could not handle being cleansed that many times lol)
pasta with corn, tomatoes, "onion-bacon," and basil (this method of preparing onions really should not taste like bacon and yet it sort of does????? this was a summer recipe i made multiple times for a range of audiences and it was a hit every time. originally from the weekday vegetarians)
creamy corn pasta (THIS HAS NO RIGHT BEING AS GOOD AS IT IS. IT'S SO SIMPLE AND YET IT'S THE BEST THING I'VE EVER TASTED I COULD EAT IT FOR DAYS. WE ATE IT ALL SUMMER)
ottolenghi's very full roasted veggie tart (it will take you hours to make and no time at all to consume but oh my god it's so good and SUCH a satisfying way to spend a long weekend afternoon. liz and i loved this so much we had to have a serious sitdown to discuss how we would divvy up the leftovers because we felt it could seriously damage our friendship if one of us ate all of it)
bombay burritos (the little sauces and things take a long time to make but you can prep a lot of the stuff a day or two in advance and gosh these are so tasty!! the curried mashed potatoes YUM)
honorable mentions:
ottolenghi's mango soba noodles (skip the eggplant i'd do tofu or something instead)
braised tofu with basil (i made this with a veggie-loaded stir fry and topped it with a fried egg)
this carrot cake (it took forever to make but it was the best carrot cake i've ever had and the only thing i'll ever make on my bday from here on out). she also has a pumpkin cake recipe that is so good and much simpler to make (no grating required)
momofuku's ginger scallion tofu with crispy coconut rice (the recipe is for a shrimp version but we made it with tofu and it was very yummy. i made this at a friend's house and it was so good i wanted to ask to take home some of the leftovers but decided that was too rude ahaha)
and then of course i gotta give a shoutout to my #1 comfort foods this year, SHAKSHUKA (my beloved) + a caprese sandwich with balsamic glaze served on really good bread.

He would love any kinds of street foods, his favorite ones would be coxinha, a fried snack stuffed with chicken; Hot dogs in the São Paulo way, they usually have mashed potatoes, corn, peas and shoestring potatoes above (with ketchup and mustard, of course) and pastel, a fried dough (the texture is similar to a puff pastry) that can have many kinds of fillings, the most usual one is mozzarella cheese. He also would love eat this while drink sugarcane juice (it's a classical combo).

This one is funny, bc in my head all the other mercs had to lie to him that they were getting 100% american food so he could at least try some, and he keep eating it without knowing the thruth. His favorite ones would also be ones of the most iconical ones, by irony of the destiny, such as feijoada and pão de queijo. He would also love farofa (is made either with corn or cassava, braised with oil and can have diverses other igredients too) but since Soldier is build diferently, insted of eating it as a side dish he just cook a huge ass pan of farofa and eat all of it with a spoon.
Pyro:

He would love brigadeiro, because is sweet as him (awwn). He would love churrasco (brazilian barbecue), so much that he, engineer and sniper would be the ultimate churrasqueiros of the team (however only engineer and sniper are alowed to touch on the grill since the incident). From the many things that can be made in a churrasco, Pyro likes garlic bread the most (because it gets burned at outisde really quickly but still ok to eat). The last thing from his list would be cuscuz paulista, recipe that blend corn flour and many other igredients, and that people from other brazilian states keep saying its ugly but THATS UNTRUE YALL JUST DONT KNOW HOW TO MAKE IT - me, a sad paulistana.

As said before, he would love churrasco, and any kind of red meat should be his favorite (picanha, striploin…). He would also like the local beer options and condensed milk pudding (pudim). No special rasion on the last one (besides giving all the mercs at least 3 itens).
Demoman:

He would LOVE drinking cachaça (alchoolic drink made with sugarcane) and caipirinha as well (drink made with cachaça, lime, sugar and ice). For eat, his favorite food should be torresmo (pork skin with fat cut into small pieces and fried until crispy), that is also a good side dish in brazilian bar's.
Heavy:

His first favorite option would be estrogonofe, wich is actually a brazilian version of a russian recipe (stroganoff), with some alterations. He would also enjoy virado à paulista (plate composed of a beans and cassava flour mix, together with pork chop, tuscan sausage, fried egg, braised cabbage and a piece of breaded banana), it's a really big meal to a really big guy. Finally, he would go for "caipiroska" for drinking, with is a caipirinha variation but with vodka in the place of cachaça (wich i didn't know existed until i started writing this kkkkkk)

Cuca de banana (a cake with bananas and a sugar & cinnamon on top) would be one of his favorite desserts (it also has a germanic origin i also didn't knew kkkkkk). He also would like specific foods from Bahia, such as Acarajé (dumpling made from black-eyed pea dough, onion and salt, and fried in palm oil, can be stuffed with shrimp or other options of filling) and cocada (candy made with coconut), but I can't specify why yet bc it envolves a headcanon/AU i'm still making and i want it to be a silly surprise, i'll edit here once it's done.
Sniper:

The last one of the ultimate churrasqueiros, his favorite item would be chiken's hearts. Aparently pumpkings are very used in australian culinary, so i like to imagine he would also like doce de abobora (dessert made with pumpking). Finally, i guess tapioca (cassava gum, can be fried like a pancake and stuffed to taste, among other uses) just suits him idk.

He would love Carolina (looks like a éclair, but is smaller, rounder, and filled with dulce de leche) and sonho (fried dough, usualy filled with vanilla cream and with sprinkled sugar above. The name of this recipe translate to "dream" in a literal form btw kkkkk). Ending this list, Spy would enjoy queijo com goiabada (a slice of minas cheese thogeter with a slice of guava paste).

HEYA FOLKS! Earlier I realized there's only 7 more recipes for this season and with aiming for about 1 dish every week-ish I’m gonna need more, so if you have any good de-fictionalized recipes, feel free to send them my way! Now- Kick ya legs up on the back porch cus today were gonna be baking some badger-patented and badger-approved carrot cakes from the Redwall Cookbook!

MY NAMES CROSS NOW LETS COOK LIKE ANIMALS
SO, “what goes in to a Brockhall Badger Carrot Cake?” YOU MIGHT ASK
1 Small potato, mashed
3 Eggs, beaten
1 Medium onion
3 Medium carrots
Fresh breadcrumbs
Fresh parsley
Salt
Pepper
Vegetable oil
You’ll want some sort of kitchen scale also, as the onion ‘n carrot are measured by weight.
For a recipe that uses breacrumbs, I’d strongly recommend leaving a slice of bread out the night before you cook, and then crumbling it by hand. You can use storebought but they have the texture and flavor of woodchips. A tad fucky wucky. In most contexts the breadcrumbs serve as a binder so you want it so have space to absorb the moisture in the food when you’re cooking!
AND, “what do Brockhall Badger Carrot Cakes taste like?” YOU MIGHT ASK Well! Kinda like latkes! Somewhat! (The ‘cake’ in ‘carrot cake’ must've been a shortening of pancake?)
Innards are tender, sorta fluffy
Carrots contribute a really nice crispy quality to the tops and bottoms of each
Like a less-oily more meaty-tasting latke
Speaking of, it somehow. Somehow. Tastes like meat. I don’t know. Its excellent.
I served it with a side of roasted garlic hummus and would 10/10 do it again, it adds a breezy quality to the otherwise stocky meal
Hard to think of a drink that'd pair well. I think it'd have to be some seltzer
I made a platter of these for a lunch-guest, hence the fancy dish, and in her words “Thats a good whatever it is”. Glowing 3/3 stars Michelin-Man your ass is mine
. Used carrot tops for plating . Added a dash of cayenne pepper dust to last cake while it was on the pan (would do this for every cake in the future)

However; I dunno if I’d make these in the future!
You will need another set of hands to help you prep all the foodstuffs!! Which isn’t bad! But it is a factor. Theres simply not enough areas to multitask as one person during the prep stage. And the serving as is isn’t filling enough for it to stand on its own without some adjustments.
It’d fit in splendid at potlucks or holiday dinners, where theres both either people to help or other dishes (so you can make a smaller portion) to focus on, 6/10, with 1 being food that makes one physically sick and 10 being food that gives one a lust for life again.
Grating is what they make kindergartners do in hell. I spent 20 minutes trying to think of wordplay that used grating (to mean annoyance) and I give up.
🐁 ORIGINAL RESIPPY TEXT BELOW 🐁
Brockhall Badger Carrot Cake:
1 small potato, cooked and mashed (1/4 cup)
3 medium carrots (6 ounces), peeled and grated
1 medium onion (6 ounces), peeled and grated
½ cup fresh breadcrumbs
2 teaspoons chopped fresh parsley
3 eggs, beaten 
Salt and pepper, to taste
1 tablespoon vegetable oil
Method: 
Preheat the oven to 225° F. Place the potato in a bowl and mix in the carrot, onion, breadcrumbs and parsley.
Beat in the eggs and season well with salt and pepper.
Heat a little of the oil in a nonstick frying pan over medium heat and drop tablespoons of the batter into the pan. Cook until the undersides of the cakes are golden brown, turn them over and cook the other side, 3 to 4 minutes per side.
Transfer the cooked cakes to a paper towel-lined plate and keep warm in the oven. Continue with the remaining batter, adding oil to the pan as needed.

What is y'all favorite food?
François: Mm, there are so many delicious things to choose from! I think mine might be fondue, served piping hot with toasted baguette! Melted cheese is like silk on the tongue, and it's so romantic to eat together. I also love pommes aligot, mais c'est très riche.
Arthur: François makes the most glorious Beef Wellington with cheesy mash (admin: he means pommes aligot), roasted veg, and gravy; it's easily my favorite dish. Of course, everything he cooks is marvelous, I'm satisfied with whatever's put in front of me.
Alfred: Oh man, that's a hard one! We're definitely spoiled around here. Probably my Mom's crispy roast chicken and fondant potatoes. Sorry - pommes fondant.
Matthew: I'm weak for fluffy buttermilk pancakes, drenched in butter and maple syrup. Predictable, eh? Or crêpes, the way Maman likes to make them.

Also, i bought a bag of caramel popcorn today but didnt open it yet. Please make mean comments to me about it so i feel even more guilt and will never hopefully open it.

my allium opinions are regular yellow onions the foundation they hold everyone else up we would have nothing without them thinks about crispy fried onions and cries a bit from the beauty red onions are good theyre pretty but i like my onions as strong as possible even when raw so dont always bother with them but again they make everything pretty green onions are everything they are the ultimate topping salad addition the second u add some thin sliced green onions on top u have a meal i love u green onions chives are a very tasty garnish but they turn to dust and mush the second u obtain them so i honestly dont use them much but chives in mashed potatoes u will always be legendary shallots are simply overpriced onions tho they are a bit nicer when raw add a nice lil something extra but the price simply makes them pointless to me and they do give me flashbacks to trying to dice shallots properly on a terrible day where i tried to get a job in a kitchen and they were like ur shallot dicing is terrible i did add them to salads a lot when i got them free from the produce bin at a different job lol garlic is everything obviously never too much garlic tho honestly hard to have too much of any allium for me lol literally the range the deliciousness again a baseline flavor holding everything up leeks are so special and unique i feel like they manage to combine the beauty of scallions and regular onions while also having a stronger flavor than either literally make anything u add them to better they dare to stand out in a world of flavor building blocks leek pancakes sauteed leeks added to so many things leeks in soups everyone wants to be her... sweet onions are very hit or miss for me they can be sooo nice raw or totally bland and flavorless especially when cooked people are really mental about sweet onions where i live cuz they grow a lot nearby so u cant even get normal onion rings u get these giant sweet onion rings and its like well i want thin onion rings this is weird and everyone is like wow get a load of this freak who doesnt like sweet onion rings as much as regular onion rings and throws me out of their establishment also at work when sweet onions were on sale id ring up yellow onions as sweet onions partially cuz i hadnt memorized the yellow onion code (despite it being one of the easiest to remember 94093 but whatever) and just to be nice.. ok end of story <3

Everything was so good. The fermented shark smelled worse than it tasted (salty ammonia flavor) which Jenny instructed us to chew 10 times and shout "Viking!" My group liked the hot dogs best. Two of the stops included Arctic char (milder than salmon), something I want to start making at home.

14. Fav non chocolate candy
TFW most of your fav candy contains chocolate. Not a huge fan of gummy stuff, hard candies or ice cream, honestly. Hm. Does cake count? Like pound cake. Otherwise, perhaps caramel.
18. Ideal weather?
Around 20 degrees, sunny and dry. It can rain in the night just fine, but please, let me stay dry when I am outside. Excellent for light jacket (which is my main source of pockets in half of my outfits) and sandals.
23. Strange habits?
Uh. Just earlier, I wondered if it’s strange to put the empty pot (with a bit of water) back on the still hot stove, so it’s occupied and I don’t accidentally touch it.
When I see something move outside (but like... in a forest, or the plants next to the sidewalk) I stop and stay very still and want to see what it was. Apparently that’s very strange. Why do people not want to see a mouse or a blackbird? 🥺
A few weeks ago I waited like 10 min without moving, until the marten I had seen run under a car (”Wtf? That didn’t move like a cat?”) came out. I scared it to death, lol.

It’s probably 2am; my occasional 5am weekend escapades can be offset by me fainting at 10am on another day.

That’s... that’s such a mean question? How could I pick?
Instant mashed potatoes are like 2 min from “I need a side dish” to “I have a side dish”. Plain cooked potatoes are an excellent fit and work warm and cold. Fries are just... fries! There’s some nasty ones out there, though. My grandma used to make this wonderful creamy potato dish, which I never managed to replicate, but getting close with some spice mix and a generous amount of laurel leaves. I love potato casserole with mushrooms so much. Oh. Potato soup. Potato pancakes. Potato wedges.
I think the best is like... good fried potatoes. If you boil them before, and slice them thinly, and then roast them with onions, so many onions and you somehow manage to get them crispy on the outside, which I never do, which is why I barely even try anymore. Mhm. That.

What is your favorite flower? Orchids and ranunculus.
If you were in Avatar: the Last Airbender, what element would you want to bend? Earth, fire, water, or air? Definitely fire, let's burn this all down and start again (looking directly at you white christian patriarchy).
What was your first job? A bagel shop! I was 14 and couldn't handle the pressure!
What is your favorite breakfast? oh geez, I LOVE breakfast food. Mmmm, I will go with blueberry pancakes and some crispy bacon and a hot cup of coffee! On a chilly Maine morning in late August, perfecto!
What's a meal from childhood that you love? The most sentimental dishes are a specific meatloaf recipe from my dad's family, and kimmelweck (a vinegar braised beef sandwich) from my mom's.
What's your favorite joke to tell? My party trick is mostly gross medical stories.
What's your favorite animal to see at the zoo? I gotta say I have an issue with zoos 😬 BUT seeing giraffes and elephants never fails to impress me!

If you're working do you like your job? I work with the most amazing team! The healthcare system is very frustrating, but I find a lot of satisfaction in caring for others.

If you were trapped in a kids tv show, what show would you be okay with being trapped in? Honestly, Paw Patrol. Those pups are so cute and so quick to a rescue!
An adults tv show? I want to be a regular at Nick Miller's bar. Or at the alibi. I love a good bar!
What kind of job did you want as a child? Well I grew up in the 90's so a marine biologist.
Do you follow any sports? What team do you root for? My husband is a big motocross fan, I don't really follow the stats or whatever, but going to races is AMAZING people watching.
If you could be any animal, what would you be and why? Probably some sort of bird.
If you could be any mythological creature what would you be and why? I am going with Pegasus because that just sounds cool as fuck.
What's the most obscure thing you've had to google for a fanfic you were writing/reading? I mostly have asked my husband penis-related questions. I am just curious how accurate we all are!
What Milkovich do you identify with most? Mickey! Had to break some familial chains, defy expectations a lil bit. Fell crazy in love with a dude.
Which one are you actually like the most? Probably Iggy, I can be a dumbass.
What Gallagher do you identify with most? I want to say Fiona, I do a lot of taking care of people, sometimes at the expense of myself? Growing up I did some reckless and impulsive stuff.
Which one are you actually like the most? Probably Ian, got a touch of the mentals, fell madly in love with a boy that had a hard time reciprocating, and definitely can be the aforementioned clueless dumbass.

5. favorite form of potato?
One of the most German things you will ever hear me say: Mashed potatoes, especially with Sauerkraut. Which I've had maybe five times over the course of my life but it's pretty good in my opinion.
Potato pancakes too, fried really crispy and with a side of applesauce.
11. anything from your childhood you’ve held on to?
A lot of children's books, some of which are really old editions. One of them is "Herr der Diebe" by Cornelia Funke, which I ADORED when I was younger.
18. your boba/tea order?
Sorry to say this, but I have never had Boba. Big on food texture unfortunately, and from the way it looks/is described, it does not sound like something my sensory issues would enjoy. I do however love tea! Don't really order it to go, but I always have a pot close when working on fics and other stuff. It's usually herbal tea; perppermint is my favourite, sometimes mixed with green and sting nettle tea because both have great health benefits but good god do they taste shit.
Chai is a writing favourite over here, and I think my recipe is pretty alright. No longer drink milk, but I also used to love a strong Darjeeling with a splash of milk.
28. last meal on earth?
Celebrated a late birthday a while back and we went to this really nice Italian place. The lasagna was so fucking good, so it'd probably be that.

Okay, one episode of Ahsoka and three very delicious and delightfully crispy mashed potato pancakes later, I have managed a rough outline of how I want the final confrontation in Seeds to go.
I'm going to start poking at it tomorrow. Though a part of me keeps wistfully thinking about that WedgeLuke fic I've been wanting to write for months or the sequel to AFWBST which I also want to write.
LOL I think my creative urge knows I've almost finished this damned monster of a fic and it's desperate to just spread its wings and write something else. But I'm trying to stay on track here.
I thought about trying to start the first part of that WedgeLuke fic tonight just to give my brain a mental refresh but after those mashed potato pancakes, I'm very much in food coma mode so I might just call it an early night and curl up with some youtube before I finally pass out instead.
