1. MOMMA’S THICK PANCAKES

Pancakes are almost sure to be a hit with kids (and adults, too). This simple breakfast food requires minimal effort, especially if you make the batter at home ahead of time and simply pour it onto the griddle or pan once you’re camping. Here’s a quick and easy pancake recipe.

Ingredients:

4 eggs, beaten

2 cup milk

1 T oil

½ tsp vanilla

4 c flour

½ cup sugar

3 tsp baking powder

How to make it:

In a large bowl, mix the eggs, milk, oil, and vanilla

In medium bowl mix flour, sugar, and baking powder

Add medium bowl dry mixture to large bowl liquid mixture slowly using an electric mixer; add more flour if mixture is too runny, or more milk if it is too dry. Mix until creamy.

If desired, add two mashed bananas to the mixture

Spray a non-stick pan with cooking spray or add oil or butter and warm on medium heat

Pour the batter onto the pan and cook pancakes until bubbles appear

Flip the pancakes one time, and cook until lightly brown

2. EASY BREAKFAST CASSEROLE

Casserole is one of those dishes that is great for kids because it’s everything they need in one simple dish. They get sausage, eggs, cheese, and some bread with this easy and tasty recipe.

Ingredients:

1 pound sausage

(1) 8-oz. package cream cheese

6 – 8 eggs

1 package shredded cheese (swiss or other)

2 cans crescent rolls

How to make it:

Scramble sausage in a skillet until brown

Beat eggs and scramble with sausage

Soften cream cheese and mix with eggs and sausage

Place a layer of crescent rolls in bottom of an oven-safe baking dish, add sausage, egg, and cream cheese mixture, cover that with a layer of cheese, and top with another layer of crescent rolls

Bake over the fire for 30 minutes or until crescent rolls are golden brown

3. BREAKFAST BURRITO

For a kid-friendly breakfast on the go, look no further than these breakfast burritos. You can opt to make these ahead of time at home and freeze them in Ziplock bags so that you can pull them out of the cooler quickly and reheat them when you’re short on time.

Ingredients:

1 T butter

¼ medium yellow onion, chopped

2 T canned green chilies, drained and chopped

6 eggs, beaten

¾ cup shredded Monterey Jack cheese

Pinch pepper

Dash liquid hot pepper sauce, optional

(4) 10-inch flour, almond flour, or cassava flour tortillas, warmed

How to make it:

Place butter in a large skillet over medium heat and allow it to melt

Add onions and green chilies and sauté for 2 minutes

Add beaten eggs, pepper, and optional hot pepper sauce

Stir frequently so the eggs don’t stick to the bottom of the pan

When the eggs are thoroughly cooked (but not dry), sprinkle cheese over and allow it to melt.

Place ¼ of the egg mixture along ⅓ of a tortilla, about 2 inches away from the bottom

Add salsa and sour cream, if desired, and fold up the lower edge, then roll from the side to form a burrito

4. WAKE UP THE DOG

Hot dogs for breakfast? Your kids are gonna love this one. It will feel like a treat for them if you serve this up first thing in the morning. And the best part? They’re quick and easy to make and a lot of the prep can be done ahead of time.

Ingredients:

6 hot dogs (cut into cubes)

1 pack of hot dog buns

2 T butter

6 eggs

¼ cup milk

Salt and pepper

Shredded cheese (any kind)

Mayo (if desired)

How to make it:

Melt butter in frying pan

Whisk eggs and milk and pour in pan. Add salt/pepper to taste

Once eggs start to form, pour hotdog cubes in with the eggs and scramble together

Put mayo on hotdog bun (if desired), spoon egg mixture in, and top with cheese

5. FRENCH TOAST CASSEROLE

We love a good casserole and this sweet one is extra tasty. Take your kids’ favorite breakfast sweet and turn it into a convenient casserole that serves up great leftovers, too. This can be made ahead of time and then reheated when you get to camp. You can add all sorts of fruits and nuts to the top of this to make it even more delicious.

Ingredients:

¼ cup flour

1 cup milk

2 tsp sugar

½ tsp vanilla

Dash salt

½ tsp cinnamon

½ tsp nutmeg

3 eggs, beaten

4 slices thick French bread, cubed

3 oz. cream cheese, cut into ½-inch cubes

½ c blueberries or other fruit

½ c pecans or walnuts

How to make it:

Mix together flour, milk, sugar, vanilla, salt, cinnamon, and nutmeg

Beat eggs and add to mixture

Add bread cubes, stir until coated

Pour in greased 8×8 pan and top evenly with cream cheese, berries, and nuts

Cover and refrigerate for at least 1 hour or up to 24 hours

Bake uncovered 20 – 25 minutes at 400 degrees or until golden brown. Serve with butter and syrup.

6. BARBEQUE SANDWICHES

Ingredients:

1 ½ cup chopped celery

½ cup chopped onion

½ cup ketchup

½ cup barbecue sauce

½ cup water

1 T vinegar

1 T Worcestershire sauce

1 T brown sugar

½ tsp chili powder

½ tsp salt

¼ tsp pepper

¼ tsp garlic powder

2 pounds cooked and shredded beef brisket

6-8 sandwich buns

How to make it:

Combine all ingredients except the beef and bring the sauce to a boil

Simmer sauce for 5 minutes, and then add shredded beef

Simmer at least 20 minutes longer after adding the beef

Spoon over split sandwich buns of your choice

7. FAJITAS

This flavor-packed lunch is something we think your kids will like. You may want to opt out of the chili powder on this one if your kids aren’t big fans of spicy food, but otherwise, this meal should make their tastebuds sing while getting in some great nutrients.

Ingredients:

8 tortillas

1 ½ pounds round steak or boneless chicken breasts, cut into long thin strips

3 T lemon juice

3 T oil

1 tsp ground cumin

½ tsp salt

1 tsp chili powder

2 T fresh cilantro, chopped

5 T teriyaki sauce

1 green pepper

1 yellow pepper

1 red pepper

1 yellow onion

Lettuce

Tomatoes

Sour cream

How to make it:

In small bowl mix lemon juice, 1 T oil, cumin, salt, chili powder, and cilantro

Pour over beef or chicken strips in Ziplock bag and marinate for at least 30 minutes

While meat is marinating, slice the onion, red, green, and yellow peppers into strips and set aside.

Heat the remaining 2 T of oil in large skillet over medium heat and add the marinated meat

Fry for 4 to 5 minutes and then add the onion, and peppers

Continue to cook over medium-low heat and pour in the teriyaki sauce

When the onions and peppers are cooked to your liking, transfer over to the tortillas and serve with lettuce, tomatoes, and sour cream

8. MAC DADDY DELIGHT

This one is a lunch best served while relaxing at the campsite, and it is one that will be a hit with the kids. Macaroni and cheese is a staple in nearly every child’s life, and this one had a tasty spin on it that makes it enjoyable for adults, too.

Ingredients:

2-3 boxes of macaroni & cheese

½ pound ground beef

Tortilla chips

1 T ketchup (if desired)

1 T Worcestershire sauce (if desired)

How to make it:

Over a campfire or stove, brown ground beef and set aside

Make macaroni as directed

When done, add ground beef and mix

Add about two handfuls of tortilla chips to mixture and mix

Add ketchup and Worcestershire sauce (or Tabasco sauce) if desired

9. WANDERING TACOS

This recipe is a fun take on tacos that is great for on-the-go eating. Though a bit messy, it is worth it for the taste and the simplicity of this kid-approved lunch.

Ingredients:

6 small bags of Doritos

1 pound hamburger

1 packet taco seasoning

1 head of lettuce, thinly chopped

Sour cream

2 cups tomatoes, cubed

Taco sauce to taste

How to make it:

Cook the hamburger with taco seasoning and other spices of choice (just make sure nothing is too spicy)

Let the hamburger cool a bit

Crunch Doritos in the bag, and add the above ingredients to the bag

Grab a fork and dig in

10. AUNT KARNIE’S PASTA SALAD

This pasta salad is great for warm-weather camping as it’s a great way to keep cool while simultaneously getting some tasty flavors in on a quick and easy lunch. It can be easily packed to take with you on a hike, and even better yet – it can be made ahead of time and kept in the cooler.

Ingredients:

4 boneless, skinless chicken breast

1 bottle Italian salad dressing

1 T Rose’s Lime Juice

¼ cup honey

1 bag fusilli pasta, cooked

1 cup chopped red onion

2 cup Caesar dressing

4 Roma tomatoes, seeded and chopped

How to make it:

Marinate chicken breasts in the Italian Dressing, lime juice, and honey for at least 3 hours

Fry chicken in a cast-iron skillet for about 5 minutes on each side

Add the rest of the marinade

Bring to a boil then simmer for about 30 minutes

Cut the chicken into cubes and add to cooked pasta, red onion, Caesar dressing, and tomatoes

Chill & serve

Jack walked into the War Room of the bunker, finding Sam and Dean hunched over the map, frowns creasing their faces with concern.

“Hey guys! I made this shell necklace for Y/N.” He held up a leather chord with a single turret shell attached to it, a proud smile plastered on his face. “Do you think she’ll like it?”

Dean and Sam exchanged worried looks. Sam stepped forward and put a hand on Jacks shoulder, “Y/N is missing.”

Jack stumbled back a little – dropping the necklace – feeling both shock and slight denial.

“No. She went out to pick up some food. We’re supposed to have pizza and watch Star Wars.” He looked to Dean. “She said that she would get you pie.”

“That was an hour ago, Jack.” Dean said. “She should’ve been back by now and she always lets us know if she’s going to be late.”

Jack started shaking his head, fear spreading through his veins like a drug.

“I’ll find her.”

And with that he disappeared, leaving Sam and Dean staring at the space he had just occupied.

I was sitting on the wooden floor of a barn, my hands bound around the wooden post against my back. What kind of Hunter am I? I thought bitterly, getting jumped by vampires. That was some newbie bullshit. There was only three of them… They jumped me from behind as I was unlocking the car to return to the bunker. They were sitting at a table across from me, playing cards and casually debating who would get the first bite. They clearly didn’t know who I lived with; Sam and Dean will find me. And Jack. Jack will definitely find me. He was like a puppy: always following me around; feeling sad when I leave the room or bunker and he can’t come with me. Yes, Jack will find me. He’s my best friend – who I have slight feelings for – and I’m his, he would never let anything happen to me. Remembering his powers, I closed my eyes and silently prayed to him, willing him to find me. The vampires stood up and started walking toward me, obviously having just decided who was going to bite first. I tried to keep my face neutral – I didn’t like to let people know how scared I actually was. One of them knelt down in front of me, he ripped my shirt to get to my shoulder. They were smart; they couldn’t risk biting my neck or they could kill me quicker. The vampire bit into my shoulder, I started screaming from the pain.

“Hey!”

The vampire stopped drinking from me and stood up. They all faced the barn door, teeth bared and snarling at the intruder.

Jacks eyes turned golden as he raised his hand. With one swift sideways motion of his hand all three vampires' heads were severed as cleanly as if they had just been executed with a guillotine. Jack rushed towards me and untied my hands.

“You’ll be alright.” He whispered gently, “I’ve got you.”

He then lifted me into his arms and transported us back to the bunker. Sam and Dean jumped up from the table at the sight of Jack holding my bloody, trembling body; I kept my face pressed into Jacks neck.

“I’ve got this.” Jack said, walking straight past them to head to my bedroom. He didn’t set me down until we got to my bathroom but I was shaking so much that my knees gave way. He caught me and gently lowered me to the ground. He placed his hand on the vampire bite; I felt the area tingle as he healed it, not even a scar was left behind. There was still blood clinging onto my skin.

“Do you think you can shower? I always feel better after a shower, it might help you.”

I nodded, “I can as long as I can stay sitting.”

Jack stood up to turn the shower on, whilst I managed to slip my shoes off and started fumbling with the buttons of my shirt. Normally I would feel embarrassed about getting undressed in front of Jack, but right now I was too shaken to care. Plus, I didn’t want him to leave.  

I managed to get my shirt off, but would need to stand in order to remove my jeans.

“Could you help me?” I held my hand up for Jack to take. He pulled me to my shaky feet, never letting go of my hand in case I should fall again. I started feeling incredibly shy; I was standing in front of my best friend - plus crush – in just my jeans and bra.

“Um. I – I’m going to need my hand… You know, to take off my jeans.” I could feel myself going red all over.

“Oh! O – Of course.” Jack went equally as red, he let go of my hand and turned around. I smiled at the back of his head – I felt better knowing that he was feeling just as shy as I was. After I managed to shimmy and stumble slightly out of the jeans, I decided to just keep my underwear on and stepped into the shower. I sat on the floor of the shower cubicle, my legs still feeling weak and wobbly.

“Is it okay to turn around?”

“Yes.” Jack turned and sat on the floor outside the shower, facing me. I had left the door open so that I could still see him and feel reassured that he was there. We sat staring at each other as the water ran down my back – soaking my bra and pants – until my emotions finally caught up with me. Tears began cascading down my face like a waterfall. Jack didn’t waste a second; he stripped down to his boxers, stepping into the shower he sat behind me and pulled me back into his arms. He kept his chin on my shoulder – his arms holding me tightly to his chest – as I sat between his legs and wept.

Half an hour later we were lying on my bed wrapped in towels; my head on Jacks shoulder, with his arm around mine. His fingers tracing circles on my skin, oblivious to how those simple movements were making me feel.  

“Y/N?”

“Hm?”

“What is a kiss?”

I raised myself up onto my elbow to look at him. “You don’t know what a kiss is?” I asked gently, feeling my heart race at this revelation. Jack sat up and crossed his legs, facing me. I did the same, our knees touching.

“I have heard Dean mention it a few times. And I have seen people doing it… But I’m still confused as to why?” His brow furrowed in confusion. I resisted the urge to smooth it out with the tips of my fingers. Instead I took a deep breath and let it out slowly before answering, trying to keep my heart rate steady.

“A kiss is – It’s a connection between two people. When a person likes another (or if they’re just attracted to them) and the other person feels the same way, they’ll share a kiss. A kiss can mean different things though; it could be a symbol of love; it could be a simple peck between friends; it could also just be used to rein in the New Year.”  

Jacks brow remained furrowed, either in confusion or concentration, I wasn’t sure.  

“But… Aren’t we friends?”

My breath caught in my throat. “Of course, we are.”

“Well, then why haven’t we done the simple peck? Isn’t it required, since we’re friends?”

All I could do was stare at him as he waited for an answer to his extremely serious question.

“Uhm, well, it would be… A little different for us.”

“Why?”

“Uhh, um well, sometimes when friends kiss it can… It can change the relationship. It could break the friendship.”

Jack looked down at his hands, clearly thinking hard about something.

“But what if one of the friends likes their friend in a different way?”

My heart was now threatening to burst out of my ribcage. Was he trying to say that he liked me?

“Do – Do you mean if someone liked them as more than a friend? Like a crush?”

Jack nodded, still looking at his hands.

“That’s different then.” I said, trying to keep the quiver out of my voice. Jack lifted his head up to look at me, a slight smile crossing his lips. His oh so kissable lips. I couldn’t help but glance at them, licking my own lips. Jack moved his head slightly closer.  

“As long as the other friend feels the same way and they’re both willing to be more than just friends, then…” Our heads were slowly moving closer together.

“Then?” Jack asked curiously, our foreheads suddenly resting on each other.

“Then, it wouldn’t entirely fall under the ‘simple peck between friends’ category.”

Our lips were only a centimetre away from each other; our breath was merging together. I felt Jack put his hand over mine on my leg, he was trembling slightly with his eyes looking down at my lips. This is his first kiss, I thought. I should be the one to make the first move.

“Close your eyes.” I whispered. He did, his lips parted slightly. I took a breath to steady myself, cocked my head to the side a little and then gently pressed my lips to Jacks soft ones. I started to pull away slightly when Jack surprised me by bringing both his hands up to cup my face and pressed his lips back onto mine as we continued to destroy our friendship forever.

We eventually broke apart, breathing deeply, Jacks hands still cupping my face; his thumbs gently stroking my cheeks.

“I don’t think we’re friends anymore.” He said happily, with a big smile on his face.

I smiled along with him, feeling the happiest I’ve ever felt in a long time. “No, now we’re something more.” Without hesitation we both brought our lips together in one of many wonderful kisses.

Being Luisa’s plus-sized friend

Luisa may be the strong one who’s rarely nervous.

But she knows how it feels to look very different from everyone else.

She first meets you when your parents needed a hand renovating the storefront. You were the one to offer her your family’s sweet-looking cinnamon buns with iced tea.

Then the kids came over. They were teasing you about your size, about how you were a toasted marshmallow that no one can eat.

Luisa’s pointed glare silenced them but the damage was done. She could easily see through your watery smile - she herself gave one too many of her own.

At some point, she became a regular customer (well, a regular since you rarely took her money). Her mom Julieta made awesome cheesy dishes, but the baked cupcakes and buns at your family’s bakery make her cheeks ache in a good way.

It made sense to become friends with you while you manned the counter. When Luisa managed to find a few minutes of free time, she would lay down on the hammock in the bakery chatting with you.

She watched as the villagers joked or teased you about your size, and how even your parents joined in. Yet you always tried to keep a smile.

One day, Luisa was having an incredibly busy day and just missed the bakery closing. She was tired and all she wanted was a cold glass of tea. Before she could drag her feet back home, you came out with a tray. Her favourite cinnamon buns, a tall glass of iced tea, and a new bun flavour. Just for her, you said.

Instead of taking the tray, she hugged you tight and relaxed into your surprising squishy body. She could almost fall asleep until she felt your hand gently patting her back.

Immediately she panicked and let you go, apologising for hurting your body and carefully looking you over. You were perfectly fine - your body was built for big hugs.

From then on, you and Luisa forged a close friendship. You were there when she needed to rant about having to carry an entire town’s burdens, and constantly show strength. In her words, your hugs were legendary for making her feel she was floating in the sky.

You understood how she felt. While you were never insecure about your body, you too felt that it would be easier to have another body. Less expectations and limitations, as your mother so “kindly” put it. Your parents meant well, but they too were concerned that you were too big to be healthy.

Luisa invited you to a Madrigal family meal and introduced you to her tio Felix, tia Pepa, and her parents - the people who accepted her uncommon figure the most.

You got along so well with them, and Julieta was more than happy to exchange recipes, especially those cinnamon buns that Luisa raved about.

You found a safe space for yourself in the Madrigals, and it all started when you offered a snack to the strongest Madrigal in the town.
