Sweet Potato Rounds with Herbed Ricotta and Walnuts  
1 large sweet potato sliced into ¼ inch rounds
1 Tbsp. avocado oil
1 pinch ground cinnamon
1 cup whole milk ricotta cheese
1½ tsp. Italian seasoning
1 Tbsp. + 1 tsp. honey
¼ tsp. sea salt to taste
1 cup raw walnuts roasted and chopped
¾ cup dried cranberries
honey for topping
For the herbed ricotta, add ricotta cheese, italian seasoning, honey, and salt to a small bowl and stir well to combine. Refrigerate until ready to use.
Preheat the oven to 400 degrees F. Use a sharp knife to slice the sweet potatoes into 1/4 inch to 1/2 inch thick rounds.
Add the sweet potato slices to a large mixing bowl and drizzle with avocado oil. Sprinkle sea salt and ground cinnamon over rounds. Use your hands to rub the oil and seasoning on both sides of the sweet potato rounds. Arrange rounds on a large baking sheet (or two if necessary). Bake for 20 minutes. Flip the rounds, then bake for another 17 to 20 minutes, or until rounds are cooked through and crispy on the edges
Spread walnuts on a baking sheet. 8 to 10 minutes before the potato rounds are finished cooking, place the walnuts in the oven to roast.
Remove sweet potato rounds and walnuts from the oven. Place walnuts on a cutting board and chop.
Place oven on high broil setting and move the oven wrack second to the top shelf. Place a dollop of herbed ricotta on each sweet potato round and place in the oven for 2 minutes, just until ricotta is melty and warm.
Add chopped walnuts and dried cranberries to the rounds. Drizzle with honey and serve!

Meatball Sub Casserole
Chef’s Note: This is so good. I really think the cream cheese spread sold me on it. Flavor is also dependent on the sauce you choose; I go for roasted garlic and herbs

Ingredients
3 green onions, chopped
1/4 cup seasoned bread crumbs
3 tbsp grated Parmesan cheese
1 lb ground beef
6 slices Texas toast
6 oz cream cheese, softened
1/2 cup mayonnaise
1 tsp Italian seasoning
1/2 cup + 1 1/2 cup shredded part-skim mozzarella cheese
24 oz (3 1/2 cup) spaghetti sauce/marinara
1 tsp garlic powder
Instructions
1. Preheat oven to 400°F
2. Lightly toast your bread.
3. In a large bowl, combine the onions, bread crumbs and Parmesan cheese. Crumble beef over mixture and mix well.
4. Shape into 1-inch balls. place on a greased rack in a shallow baking pan.
5. Bake at 400°F until no longer pink, 15 to 20 minutes.
I did 20 minutes
6. Meanwhile, arrange bread in a single layer in an ungreased 13x9-in. baking dish.
7. Combine the cream cheese, mayonnaise, and Italian seasoning. Spread over the bread, completely covering it and filling any gaps between slices.
8. Sprinkle with 1/2 cup mozzarella.
9. Pour the sauce over the mozzarella, and sprinkle over garlic powder. Mix and spread until even on top
10. Add meatballs.
11. Sprinkle with remaining 1 1/2 cup mozzarella.
12. Bake, uncovered, at 350°F until heated through, about 30 minutes

Slow Cooker Salmon with Creamy Lemon Sauce
3 lemons, divided
1½ to 2 lbs. skin-on salmon fillet
cooking spray
salt and fresh ground pepper, to taste
½ tsp. sweet paprika, or to taste
½ tsp. chili powder, or to taste
1 tsp. garlic granules, or garlic powder
1 tsp. Italian seasoning
1 cup vegetable broth
juice of 1 lemon
3 Tbsp. lemon juice
¼ cup chicken broth, water, OR white wine
⅔ cup heavy cream
⅛ tsp. lemon zest
chopped fresh parsley, for garnish
Line slow cooker with a large piece of parchment paper. Cut one lemon into slices and arrange a layer of lemon slices down the middle of the slow cooker.
Place salmon on top of lemon slices; spray salmon with cooking spray and season with salt, pepper, paprika, chili powder, garlic granules, and Italian Seasoning. Using your fingers, rub the seasoning all over the salmon.
Pour broth and lemon juice into the slow cooker, all around the fish. DO NOT pour it over the fish. The liquid should come about halfway up the fillet. Cook on LOW for 2 hours, or until opaque and flaky.
Preheat oven to 400F. Lift up the slow cooker bowl and pop it in the oven for about 5 to 8 minutes to get a bit of that browning on top of the fish. (Most slow cooker bowls can handle oven heat up to 400F)
Remove from oven and lift out the fish by the parchment paper; transfer to a cutting board and set aside.
For the sauce, set a small saucepan or pot over medium-high heat and stir in lemon juice, broth, and cream. Bring to a simmer. 
Set heat to LOW; cover the pot and cook for 8 minutes. Uncover; stir in lemon zest, set heat to HIGH and cook for 2 more minutes, or until sauce has thickened a bit and reduced. 
Remove from heat; taste for seasonings and adjust accordingly. Cut up the salmon into individual fillets. Pour sauce over the fillets and garnish with parsley. Serve with lemon wedges.
