BAD BUDDY – A 10-MINUTE RECIPE WITH TAO KAE NOI

So after watching Pat and Pran munch their way through much Tao Kae Noi crispy seaweed, I went on to try the snack myself and I have to say it was delicious. 😊

I bought rather a bit too much though (I don't snack all that often). But because the TKN reminded me quite a lot of furikake, I decided to try it out on pasta to use up the stash. And came up with this – a 3-ingredient, storecupboard staple lunch ready in 10 minutes:

A 10-minute recipe has no business tasting this good, but it REALLY does – I licked the plate clean. Thanks TKN!
The ingredients are:
Pasta of your choice (I used spaghetti here)
Kewpie mayonnaise (you can try other brands, but I beg you to use Kewpie if you can get it)
Tao Kae Noi (Hot and Spicy Flavor) – or substitute Original Flavor plus dried chilli flakes
Cook the pasta according to the maker's directions (usually 8-9 mins boiling in heavily salted water).
Squirt on and stir in some Kewpie mayo (you need less than you think – about 1-2 teaspoons per portion only, just enough to coat the noodles).
Crumble some Tao Kae Noi Hot and Spicy over, and it's ready to eat. If you like it spicier, sprinkle on additional dried chilli flakes (I do and I did).
This is both satisfying and delicious (With Good From The Sea as it says on the packaging 😊), just as it is. But if you want to round out the meal with veg and protein, and don't mind the extra effort, you can blanch some greens (like bok choy) in the pasta water after the noodles are done, then hard-boil eggs (5-6 minutes) in the same pot after removing the veggies. Splash the greens with soy sauce and Chinese rice wine. Or just toss some coarsely-chopped raw tomatoes into the cooked pasta before sprinkling on the TKN. And/or grill some salmon while the pasta is cooking, which is what I did (just 7 minutes in the oven). Shrimp (or any other good from the sea 😉) would also work well with TKN's seafoody flavor.
I did some rummaging around the Internet after eating, and found similar recipes online (GMTA/FSD I guess). They're a bit more involved, but worth a go if you're adventurous and also have extra TKN to use up: Eric Kim's original Creamy Bucatini With Roasted Seaweed on the Bon Appétit website, the Washington Post version, and Mentaiko Pasta with Cream, Shiso, and Nori. Plenty of others abound.
But there's more to Tao Kae Noi than just a tasty snack or a handy meal hack. It's also a bit of a multicultural marker. For more on that, the write-up's linked here. 😉

Jin chuckled as he found you asleep on the couch. He carefully pulled a blanket over your sleeping form and tried to place a pillow underneath your head so you wouldn’t wake up with a stiff neck. He slid it under your head gently, not wanting to wake you up.
He then considered the more obvious solution of carrying you to your room. On one hand, you would be more comfortable there. However, on the other, if you woke up or put together that he carried you, you might consider it a crossed boundary.
Not wanting to risk the potential friendship, he turned off the TV after making sure you were comfortable before heading to bed himself.

I woke up on the couch with a blanket and pillow that I didn't remember grabbing. Not thinking much of it, I put them away in the hall closet, but not before spending too many minutes curled up, not wanting too move. When I finally stood up, I washed the glass from last night and ate a piece of dried squid. Deciding that I better wash up since I was joining Seokjin's company, I took a quick shower and slipped on a pink, oversized sweater, making sure to pull on a pair of worn denim shorts, though they nearly disappeared under the top.
It wasn't like I still felt the alcohol from last night, but out of habit, I craved something comforting. There was still rice from last night, so I assembled a bowl of ochazuke for myself: rice, salted salmon, shredded seaweed, sesame seeds and rice crackers, furikake and soy sauce, all submerged in hot green tea. I figured I could quickly put together one for Seokjin if he was interested. As soon as the rice was heated up, I started eating.

Ok so, it’s a new year, time for a new look…it’s time to break the mold of the old and be cool with what’s new.  Like that Tupac song goes…”it’s time for a change, let’s change the way we eat, let’s change the way we live, and let’s change the way we treat each other.  You see the old ways wasn’t working so it’s on us to do what gotta do, to survive…”
The New Year tells me that it’s time for a change...it’s time to reintroduce myself.  It’s time for IslaNani sucka’s!  That sounds good, don’t it?  IslaNani….it’s….it’s….well it’s the soul in my food, my travels, and how I feel when I see my family and friends.  IslaNani is a state of mind, a sojourn of the spirit, very Metamucil…just close them eyes, take a deep breath and when you reopen them eyes, see the world for what it was intended to be…beautiful, loving, and filled with those we care about the most.  So…what does all this mean?  Shee-yit, it means I’m back fool!  But I’m changing up the game while staying true to what got me here and that is sharing my passion for life, food, and still making dumb assed uncle jokes along the way.  So, you ready?  I’m ready!  Let’s get down!!
Ok then, I recently got back from a 19 day trip to Hawai’i and I have to say it was transformative.  Not Transformative like Bumblebee or Optimus Prime Rib…but like it provided me the chance to be with my family as we found new things to love about a place we have gone for the last 10 plus years.  It was really cool to see new things and go on new adventures in a place that had become so familiar and laden with the same haunts each jaunt.  Think of it like looking at yourself in the mirror all the time, same old you.  You say to yourself “I’m good looking but it’s the same reflection every time.” Then one day you realize, “Hey, I have really nice ear lobes…those are some nicely shaped lobes.  I never realized how good looking those things are.  I’m gonna go out and show my badass lobes to the globe.”  I also came away with a new found appreciation for my family relationships in general.  We even made some new friends that we will be in touch with for years to come.  That’s what got me thinking about a shake-up in my blog postings.  I’m still sorting this out, but I feel like mixing up food and travel will be a nice blend.  Basically when I travel, I find something good that I ate and I come home and cook it.  So why not bring the two together?  Food and travel go hand in hand like Charlie Brown and Snoopy, ball games and hot dogs, a white Speedon’t and that one European dude at the beach playing badminton by himself for some reason…just matches made in heaven.  I mean damn, they have a full channel dedicated to it.  Not the European Dude Speedo Badminton Beach Championships (or the EDSBBC for short), but you know…travel.  One day I’ll have to audition for one of those Travel Channel shows.  We call it, “Can’t Take Him Anywhere Nice” starring Uncle Manny.  But sadly, that dream will have to wait.  Until then, I’m gonna show off some sweet Hawai’i pics and take on a couple different ways to prep up musubi as well as some egg rolls.  So slap on those board shorts and that chef hat and let’s get to work motha sucka’s!
Egg Rollin’ with the Homies
Egg roll wrappers (thawed)
2 chicken breasts
1 bell pepper diced
1/2 onion diced
2 tbsp. of minced garlic
Taco seasoning to taste
This isn’t exactly a new one, but it’s something that the wife had on our last trip and she wanted me to make it for her.  So to start, in a medium sized bowl, rub the chicken breasts with taco seasonings then put a little oil in a pan over medium-high heat and cook the chicken breast until done, about 10 minutes.  Once done, remove from heat and place on a cutting board to cool.  While those breastesses cool down,  put the pan back on medium-high heat and add in the onion, garlic and bell pepper and cook for another 5 minutes.  Remove from heat.  Go back to the chicken and dice it up into small pieces, return the pan to the heat and mix in the chicken with the veggies and cook until it is all blended in.   When done, set aside and allow to cool for about half an hour.  While you wait, go like drink a beer or something.  Once you have waited for half an hour, or about 4 beers (because 4 beers in half an hour is about right isn’t it?) take out the egg roll wrapper and place a couple spoonful’s of the mixture on the bottom corner.  Wrap up the egg rolls and set on a cookie sheet, plate, or whatever flat surface you want to use.  From here you can pan fry them in oil, or if you are one of those do-goody “I don’t fry stuff because I’m healthy, but I’ll bake the sh*t out of it” types then that’s cool too.  Just put a little oil on a cookie sheet, brush a little oil on each egg roll and bake it at like 425 degrees or whatever temp you like.  Me?  I’m the “Fry-day is My-day” type so I puts ‘em in oil and eats ‘em up.  If I wanted to be healthy I’d eat a salad and run a mile.  So anyway, once these are done, you can set out some salsa for dipping or do it my way with a couple spoonfuls of sour cream mixed with Chipotle Tabasco for your dipping sauce.  This recipe feels very Guy Fieri, but who gives a spit, they taste good cuz!
Don’t Worry, Musubi Happy
Steamed white rice (sushi rice preferred but jasmine is ok for musubi)
Nori sheets
Portuguese sausage
Salmon
Teriyaki sauce
Furikake
What you want to do first is steam the rice.  While that steams, cut the sausage in long strips, then pan fry them on medium-high heat.  They will be done when they are a little brown and slightly crispy.  When done place on paper towels to cool but keep the oil from the sausage in the pan.  Now put the salmon in that same pan and on the same heat, drizzle on some teriyaki sauce and cook on one side for about 8 minutes.  Flip the salmon over, then, cook the other side for about 8 minutes, drizzling on more teriyaki sauce.  When done, remove from pan and set on a plate.  Next get the nori sheet and place on a sushi mat.  Cover the nori with rice, salmon, and Portuguese sausage.  Leave about an inch of space on the end of the nori so you can close and seal it.  Sprinkle on a little Furikake and then roll it up in the mat.  Taking a sharp knife, run it under some warm water and slice into equal-sized rounds.  With every other cut, run the knife under warm water since this will help the knife cut through the nori and not tear away at it.
So there it goes…my first post of the New Year.  Hope it was fun and informative because if not, too bad, it only goes downhill from here my dudes and dudettes!  If you decide to try these recipes at home, just take your time with it and have fun.  If you have kids, encourage them to help.  Give them the hot oil and frying pans as well as the sharp knives, then, leave them unattended while you go fetch another drink.  Nooo! I’m kidding!  Let them turn the oven on too…all right y’all, until next time, be cool.

As promised, I have a sweet ass video of Hawai'i! Turns out my inlaw's neighbor works for a great ocean excursion company called Trident Adventures and they took us out for a cruise early after Christmas. You can find them at www.tridentadventures.com and they are worth checking out. They had plenty of snacks and drinks for the kiddos plus they are just very nice people. The crew is great and run by military Vets so you get to be out on the water with our nation's finest. I guess the crew of Hawai'i 5-O was out on the boat as well as the dude from Aquaman so they have a pretty swank clientele list. Even Z list stars like me (I was in a Hollywood movie about Prefontaine for like point zero 2 seconds). Even though I didn't sign any autographs that day, the kids had a blast and saw half of the supporting cast from Finding Nemo. I'm talking full on Honu, Whales, small fishies...but hey, we were just around the corner from Disney's Aulani so it made sense...

On Changing Recipes Slightly so I Can Eat Them
There is a big difference between 1200 calories and 1800 calories, but since I’m only exercising for about 200-300 calories a day, I can’t really eat what I remember eating when I lost weight the first time. Less leeway for sugary things or for snacks and nibbles that aren’t recorded.  My normal diet is not that unhealthy... I eat plants, I’m mostly vegetarian, but I do snack a lot. And those snacks add up. Nuts are “healthy” but they do not make me feel full. Costco Shiitake mushrooms are the most delicious substance known to humanity right now, but they have more calories than they should and I can eat 2-3 servings of them in a day. Right now, I’m doing amazing at not snacking, and recording everything I eat. Recording = accountability, and Noom says that someone is going to be reviewing the logs... which means I don’t really want to document “3 black jellybeans, 1 square of Milka Darkmilk chocolate, 1 wafer cookie, 1/3 cup of crunchy mushrooms, 6 cashew nuts, 6 wheat thins, and a tablespoon of charoset.” Yes, really, I don’t eat big quantities, I just nibble. I often forgo “lunch” for the nibblin’ because I know how much I do it. (And this is why my weight has remained relatively stable for the past 2-3 years.)  So, recipes! We had pizza dough! Instead of the usual thin crust veggie pizza, I tried using half of the dough I usually use... 4 ounces (I weighed it!) stretched as thin as I could do it. I got it quite thin, and the result was a mushroom-laden crispy disc that had 500 calories for the whole thing (and I ate half!) Sweet! It smelled good, and tasted good, and I felt like a human eating it. My partner, of course, made his usual 1500 calorie sausage and pepperoni and extra olive oil pizza, and I didn’t have even a bite!

And then Poke! My favorite food! On the grocery run today, I found salmon that I felt comfortable eating raw, and made some substitutions. More cucumber/shredded carrot, keep soybeans and corn the same, use 2 tbsp of spicy mayo and 3 tbsp of miracle whip (for 5-6 servings), and put it on a bed of lettuce and sprinkle black rice on top rather than a bed of rice. Bonus seaweed salad and squid salad, because yum! A spoon of fried garlic, a sprinkle of nori komi furikake, and we have something that tastes like it came from the restaurant, only with fewer calories and all the flavors. (I forgot the tobiko! Need to add that to the next one!) About 600 calories for a big serving, but I can afford it, and I don’t want to ever feel like I’m suffering.

Day 2 成田市 Narita
After a traditional Japanese breakfast of salmon, オムレツ (omelette), キャベツ (cabbage), 団子 (meatballs), and rice with 海苔(seaweed) and 振り掛け (furikake), at 9:45 the group set off for 成田山公園 (Narita-san Park). The weather was perfect; about 18°, not too hot, clear blue skies, and not a cloud to speak of.
Our first stop on the tour led by Katsumata-san was the 書道美術館 (calligraphy museum). Unfortunately no photos were allowed within the museum itself, however the huge stone carving in the entrance was impressive enough to make up for the restrictions on the rest of the works. What I found interesting about the displays was that the 描き方 (way of writing) differed so greatly from period to period. While some were barely legible, written in a way that made it seem as though the artist couldn’t hold a brush straight, others were so precise they seemed like computerised fonts.
Outside the museum was a 水琴窟 (water koto). When I first put my ear to the pipe sticking out from a stream filled with rocks, all I got was radio silence. Katsumata-san then had to pour more water inside, and when he did, I was surprised by the pleasant wind chime sound that the water droplets made.
We continued our walk through 成田山公園 to the 平和大塔 (peace tower) at the top of the park. Upstairs was a giant blue Buddha that I found rather intimidating. So intimidating, in fact, that I gave him 5円. May he do with that what he will. Because we were running a little behind schedule, Katsumata-san (a little more hurriedly) showed us 光明堂 (kōmyōdō), the original temple around which the others in the park were constructed. We also visited two 神道 (Shinto) shrines, the first of which was for becoming smarter.
・Shuffling Gaijins・
One of the things I became aware of quite quickly when travelling as a group of 21 people is that in a country like Japan we take up an awful lot of space. There are also a few in our group who seem to have trouble matching the required pace and so stragglers mean we are even more spread out than we should be. I can only apologise to the locals, and hope that my self-awareness is enough for them to not death stare me/spit in my food.
After a quick photo opportunity at the 菊 (chrysanthemum) festival, we had the opportunity to watch a 七五三 (753) ceremony in the impressively decorated—but unfortunately photography-restricted—main hall of 新勝寺 (Shin-shōji). We then visited the next 神道 shrine; this one for increasing wealth. At this shrine, you could buy 稲荷 (tofu skins) and offer it to the shrine to be granted good fortune.
This concluded Katsumata-san’s tour, and it was then off to イオンモール (Aeon Mall) through a series of backstreets featuring cats, money-stealing vending machines, and a house with a tractor parked outside.
イオンモール was free time to eat and splurge. Not particularly hungry or wanting to buy anything, Ruby, Jady and I headed to the arcade for the プリクラ (purikura) photo booth. The result was a mixture of horrifying and cute. Pictures will be provided below.
After dinner, Katsumata-san brought out some family heirlooms to rival those on Antiques Roadshow. Samurai swords, helmets, a Portuguese gun, and particularly entertaining masks made their way around the group. I particularly enjoyed what was dubbed ‘Lady Blade’, as only girls got to hold it.

This man is an absolute legend. He had the most incredible patience and tolerance with our group. Despite us turning up hours later than expected on the first night, constantly wandering off in the wrong direction, not knowing what to do with the food prepared for us, he was an incredible host. On our tour of 成田山公園 he wore a Chanel jumper and we found out that he enjoys dancing. The very definition of 元気, he made us feel welcome from start to finish. 有難御座います、勝俣さん!

She certainly does cherish their relationship quite a lot and is just so happy Erina found someone who can give her that one special smile.

When did they have their first kiss and under what circumstances?
Depends in which fanfiction we’re in //slaps herselfOkay! I headcanon Erina and Soma to both travel the world after graduation and welp, their kiss happened on one of the thousands of plane flights.
Most of the other passengers were sleeping because it was a flight and night and well, Erina looked out of the window inspecting the night sky outside while Soma next to her minded his stuff as she suddenly whispered. “This is pretty nice, a little like back then on the train…..in the past I often didn’t even looked at the sky during flights once…” He responded with a laughter. “Glad you like it.”They ended up in a small, calm conversation about past, present and future with a lot of shy giggles in-between, hardly trying to not wake anyone up. At some point he says. “Who could have imagine that some day we would sit here…together, huh Erina?”She doesn’t responds and just looks at him. He does so as well. One things lead to the other and suddenly their lips lock.
Who confessed their feelings first?
Soma.
Right after the kiss he whispers “I love you.”
What was their first official date?
Actually the whole world travel was one, but however if you ask the two they will say this:
At some point they return home to the diner and well at their first evening, Jou prepares a very nice diner just for the two, which they enjoy with candlelight in the small diner.

Absolutely okay with it.
What do they do in their down time?
They like to sit on the coach together, Erina reading Shoujo Manga leaned against Soma who plays some games on his mobile phones.
Sometimes one of them suggests to start a movie…..
…then the argue about “which movie” starts…..
What was the first meeting of parents as an official couple like?
Jou just had these two standing in front of him right out of nowhere all of the sudden. But he did end up laughing and shaking his head. “Knew it all the time.” For the first day, he leaves them to peacefully arrive and makes them candlelight dinner (as mentioned above). They start the real talk the next day, but it’s a calm talk and everything’s fine. Let’s skip Azami for now alright? Since this is rather difficult.
What was their first fight over and how did they get past it?
Their first fight was over Transforming Furikake and Transfer Exams.
It got resolved trough Erina saying “Delicious” but also by these two just in general starting to actually like each other. 
Which one is more easily made jealous?
Erina probably. I can just picture her as a girl who rather easily gets jealous. 
Not that Soma can’t be jealous either, but Erina doesn’t actually gets hit on a lot of times, simply because nobody is brave enough to do that. 
What is their favourite thing to get to eat?
Erina loves to eat Soma’s Chicken Egg Tempura Don of course. 
Soma just in general loves every dish in which Erina tried something new. The more creative the more he’s going to enjoy it. Because he is just filled with so much happiness when he actually sees her trying things and going beyond her horizon.
It’s a tradition that they try to use Salmon Roe in dishes meant for anniversaries. 
Who’s the cuddly one? What their favourite cuddling position?
Soma loves to cuddle her, but Erina defiantly enjoys it and never complains. It makes her feel all soft and safe. 
It’s often simple spooning, with Soma being the big spoon who hugs Erina from behind and pulls her closer to him.
Are they hand holders?
Yeah sometimes, but not all too much. Soma rather lays his arm around her and they walk like that. 
How long do they wait before sleeping together for the first time? What’s the circumstances?

Oh well it happens on their traveling. 
You know they had to share a bed in one of the hotels, since the rooms they have are always rather smol and well. It was quite chilly at night and Erina was freezing so she snuggled closer to Soma, saying that she is cold. He just chuckled and laid his arm around her again.

Well, the cooking is of course pretty balanced as expected from Totsuki students. Whoever gets to the pots and pans first, has it for today! It’s almost a little competition.

Erina loves to have it tidy and she actually started to like tidying up during her time in the dorm. 
Soma does assist her a lot of times tough and they have a lot of fun.

Soma.

Seperate. 
Who is the best man/maid of honour? Any other groomsmen or bridesmaids?
Best Maid is Megumi and Maid of Honour is Hisako.

Surprisingly rather small. 
But Erina’s dress is defiantly a high class one.

Yes! A son and a girl just one year younger than the son. 
The boy is on the surface personality-wise more like his mother, he also adapted her special sense of taste. But he is very chaotic actually and can be quite dense, also he enjoys disgusting dishes because “Wow, they’re just so bad.” Admires his grandfather a lot. 
The girl is most of the time all happy-go-lucky and very creative when it comes to cooking. She’s surprisingly rather anti-social tough, because of her intense focus on the dream to take over the diner someday. She also is way more organized than her brother and even uses sarcasm!

How did they they meet?
On Totsuki in a certain dormitory!
Who developed romantic feelings first?
Ryoko probably. She also admitted her feelings to herself way faster.
Shun was a little confused with his feelings for quite some time. And after he finally acknowledged them, he sure didn’t knew how to tell with them and of course also didn’t ask anyone for help.
Luckily Isshiki and Zenji both noticed at some point (Satoshi did first) and tried to help, each in their way, without making Shun feeling uncomfortable. 
Who is their biggest “shipper?”
Yuki! Defiantly!
Right after Ryoko told her that she started to crush on Shun, Yuki just squealed and was like: “Yes! I approve!” 
I mean yo, Yuki get’s excited about the other people’s relationship and probably loves to hear about her friend’s crushes. 
She gets especially supportive of Ryoko’s and Megumi’s love life. 
And well, luckily for Ryoko Megumi also lives in PSD and can actually calm Yuki down to not make a too obvious move. 
When did they have their first kiss and under what circumstances?
After a date in a restaurant, they walked home, close together and linking arms, peacefully talking.
As they arrived right in front of the door of the dorm, Ryoko turned to Shun and smiled and says that she had a wonderful evening, for which she also thanks him. 
He smiles back and responds. “Glad to hear so.” He turns away from her to open the door and mumbles “Really, I am still glad that you actually enjoy my company….”
She then softly turns his head to her, get’s on her tiptoes and then the soft first kiss happens. 
Who confessed their feelings first?

While I’ll be making Star Wars-themed stuff for #maythefork later this month, I had to get in on the action today, so I used my Star Wars Bento and Bento Bag! (The Bottomless Pit had his usual green bento box.) I bought both from tokyu hands and donkihotei respectively when the Bottomless Pit and I went to Japan for our honeymoon. I found it really funny that somehow the Japanese merchandiser decided that “We’re Doomed” was an appropriate phrase for a bento box.
The bentos consisted of:
Tamagoyaki (recipe here)
Marinated tiny shrimp (from a packet)
Cherry Tomatoes and Celery sticks
Umeboshi
Salmon Flakes and Furikake (I got some cheap salmon bits, grilled them, flaked them to remove the bones, then simmered the flakes in a pan with 1 tbsp soy sauce and 1 tsp mirin, then topped it with furikake.)

These kinds of bento boxes rose to prominence when mothers wanted to show off their skills by making their child's lunch extra fancy, thus inspiring jealousy and intrigue amongst the other children and THEIR mothers. And for good reason! Bento box designs of this quality aren't something you just casually do. They take time, effort and serious planning. Which begs the question: where did Haiji find the time for this?
  I recreated the bento and it took me roughly two and a half hours. That's right, TWO AND A HALF HOURS! In the end, I had a full hour of footage to sort through to crop it down to the mere five minutes you see below. The key is all in the details with these bento designs. If you can't get the nitty gritty design elements down, you'll fall woefully short. That translates to cutting slivers of nori to make the shading between teeth and individually placing each mustache nori hair above the mouth. Something I totally FORGOT to do was the beard!  You don't notice it at first, but it's one of those design elements you really need to make it a perfect bento recreation.  
    The side dishes alone take some care and effort to curate. I bought the burdock root salad and pickles, but hand carved the carrot and made the tamagoyaki. I had to pick up the right cut of salmon from my local Japanese grocery store, but if you go to your butcher you can likely get them to cut you a fillet that looks right. The bacon wrapped asparagus is simple to make, and tasty to boot, but I found the overall challenge was that I had TOO MUCH of everything compared to what was needed for a single bento box. I'd recommend choosing sides based on two things: 1) What you love to eat and 2) What you don't mind eating a lot of, because it's impossible to buy anything in small enough amounts so that you only get what you need for the one bento. 
    Luckily, despite those small snafus, I was really happy with my end design. If you want to try this bento recreation out yourself, I'd recommend taking your time and having patience. If you expect to do this right, it takes planning and care. For example, I made or bought the side dishes a few days before, and spent all my time and energy trying to make the face as perfect as possible. It helps to have a design to follow, like I did, and that can serve as a stencil for your food items.

Therefore, no footage of the near collisions as some idiots used the ‘remain in your lane’ concept to do a 90mph slalom to still make the exit for SFO. Luckily, we set course to the coast by taking Highway 92 to Half Moon Bay, where we picked up Highway 1 southbound again, readjusting to the laid back pace and amazing scenery.
The only scenic pictures we took along the way was at our first real stop at the Gazos Creek Año Nuevo State Park near Pescadero:
As we wanted to visit the aquarium in Monterey that afternoon, we only had a short stop in Santa Cruz. The Hawaiian food we had in Eureka had struck a chord and due to our craving for a good Poke Bowl, we had selected Pono Hawaiian Grill (120 Union St) for lunch.
Chantal opted for the Salmon-Cilantro & Avocado Poke: cubed salmon filet, sweet onions, green onions, tomato, fresh minced cilantro and sliced avocado, shoyu poke sauce, black sesame seeds and sushi ginger on top. I chose the Creamy Wasabi Poke: cubed Ahi tuna, sweet onion and cucumber mixed with wasabi mayo and topped with Japanese furikake seasoning, sushi ginger and crispy wontons. They were both incredibly tasty! The kids had the Grilled Teriyaki Beef: sirloin tip beef marinated in a shoyu, garlic, ginger and sugar-based marinade topped with sesame seeds and green onion (and steamed rice and macaroni salad of course!) as well as the very nice Kalua pork Quesedilla which came with a very nice sweet and sour sauce.
The Monterey Bay Aquarium was a great experience due to the fact that a number of the tanks relating to the local maritime life are connected with the Monterey Bay. With surf and current simulation and pumping vast amounts of bay water into the tanks, they tried to recreate the natural habitat as much as possible. Also the history of the Cannery Row, immortalised in Steinbeck’s classic novel Of Mice and Men, was very impressive.

The Lion’s mane and Egg-yolk jellyfishes, the larger species of jellies found in Monterey Bay (and along the entire west coast of the Americas) are truly fascinating, especially the egg-yolk jellyfish pictured here. As if a large egg was cracked and poured into water, their bell is yolk-yellow at the center, with hundreds of tentacles clustered like an underwater spiderweb. I think that despite the crowds I spent about 5 minutes looking at their slow and majestic movements.
With an entrance fee of $50 for adults and $30/40 for children and students respectively, it was one of the priciest visits on our road trip, but well worth it and it was completed packed on an overcast Tuesday afternoon.
As we spent several hours in the Aquarium, we checked in the Hotel Abrego (755 Abrego Street) around 6pm. We spotted a Thai restaurant, Krua Thai in a food court across the street from the hotel (731 Munras Avenue) and their menu also had noodle soups on it, so the kids were in favor of having dinner there.
For starters, Chantal opted for a cup of Tom Yum Soup (Tofu, Lemon grass, tomato, mushroom, cilantro, and lime juice) and the rest shared a portion of the Thai Chicken Satay served with peanut sauce. As said, for mains, the kids opted for beef and chicken noodle soups (rice noodles in chicken/beef broth with bean sprouts, green onion, and cilantro). They had a variety of flat noodles – relatively thick and a width of about 1 1/4 inch / 3 cm – that we had never come across before. The kids loved them and impressed the waiters in how far they managed to eat the adult portion soup.
Chantal had her eyes set on the vegetarian Panang Curry with baby corn, carrots, bell pepper and basil, which was delicious. I chose their signature Laab Kai dish which was ground chicken marinated in lime juice, roasted rice powder, mint, and red onion served with cabbage wedge. This was a truly amazing dish and despite medium hotness, its incredible punch was really addictive. At the least when you visit a Thai restaurant, you already prepare yourself that “medium” hotness level is the equivalent of burning out in a controlled manner under constant supply of Chang and Singha beers… Sweat was beating on the brows, but we just had to dig in again and again… Yum!

A First Look at North Shore Poke Co. in Westchase

Poke, according to some of the pundits out there, is "the trending food" in Houston right now. Sigh. While something trending can be a good thing if it gets folks to break out of their old habits and try something new, just because something is trending doesn't mean it's necessarily good. However, if anyone is making good food, it will speak for itself with proof of concept being in the eating and so on. Thankfully in my Westchase 'hood, there is a Poke place that's been open a little over a month called North Shore Poke Co. that has been building an audience very well due to a great product. Full disclosure: it is part of a 4 location chain based out of Huntington Beach, California and is producing a dish that originated in Hawaii. But first a little background: North Shore Poke Company is a family-run business entirely dedicated to creating mind-blowing good Hawaiian poke that opened in March 2012 in Huntington Beach, CA. Just one block shy of Main Street. It was while serving in the Coast Guard Chef Shawn Gole caught the Poke bug and wondered why even Hawaiian restaurants on the mainland were overlooking this tasty fish offering. Shawn teamed up with his father and pastry chef sister, Melissa Gole-Vasquez to bring a Poke fix to Orange County. Since then, four other locations have made landfall, with the first in Houston opening in February of 2017! But for the uninitiated, let's talk about what Poke is first. Per Hawaii Magazine: The word poke (pronounced poh-keh) is Hawaiian, meaning “to slice or cut crosswise into pieces.” The basic poke mixture of cubed raw ahi (tuna), salty seaweed, and crunchy sweet onions. The poke first eaten by native Hawaiians was a simple mixture of raw fish, Hawaiian salt, seaweed and chopped kukui nuts (called inamona in Hawaiian). Post-colonial contact, that basic recipe got a bit more interesting with the introduction of onions and, sometimes, tomatoes to the mix. Go to most fish markets in Hawaii today and you’ll find a wide selection of poke—from tako (octopus) with ginger and garlic to tofu in shoyu with watercress and tomato. We’ve seen poke recipes with raw crab, cooked shrimp, clams, smoked salmon, pipi kaula (dried and smoked beef), even seared ribeye steak. There are now hundreds of poke recipes in Hawaii for every kind of taste. So, think of typical sushi ingredients, served more as a salad, in a bowl, on a base of steamed rice or greens such as cucumber. The Menu at North Shorefeatures what would be considered standard sushi ingredients for mixing in your Poke bowl. We visited North Short Poke Co. over a couple of different days to try a few different items on their menu. We found the fish to be fresh, we found the food to be full of flavour and the staff to be friendly. In the photos on the left, you see two of their Latin Inspired Poke Dishes: the Waimea style Poke Nachos (Waimea Style Salmon Poke Over Tortilla Chips. Topped with House Hot Sauce & Furikake). This is a cool yet spicy crunchy sushi nacho treat! As my daughter Helena is a Fish Taco fan, she went for the Fish Tacos (Waimea style salmon poke, Sunset, or Pipeline Poke. Topped w/ Cabbage on Corn Tortilla). This Echos the trip to San Diego long ago where I first tried fish tacos, but with a different twist--a sushi style salmon hit with some spice. Grades: A and A+ respectively. On one of the other visits, we hit up some different styles of poke bowls in the proper sense. The photos show clockwise from the top: A Pipeline Bowl with Avocado added (Mix of Ahi Tuna and Salmon, Sushi Nori seasoning, Pipeline sauce, Avocado, Mangoes over steamed Jasmine rice); Jason's built it yourself bowl with Salmon, Soy Sauce, Sushi Nori seasoning, with steamed Jasmine rice; and a Waimeia Bowl (Salmon, Waimeia spicy mayo sauce, Nori Seasoning, Macadamia nuts, onions). The main commonality we found was good, cool fresh sushi grade fish, great seasoning and fresh steamed rice. The Waimea sauce is creamy yet spicy, full of umami. The Spicy soy in the Pipeline is like a robust brewed vineagar with a little heat. Everyone enjoyed what they ordered that is for sure! Grades: A+, A and A+ respectively. I'll be checking out a number of other new and established Houston area Poke joints over the next several weeks. North Shore being in my local neighborhood and having a great product has already set a good precedent. As my pal Jack Long has said "It is good to live in Houston if you love to eat a diverse batch of food!"
