Biriyani is now an Oxford Dictionary word, that means "Asian dish made from rice with meat, fish or vegetables". So I am not going in details of what this dish is about. Rather I will focus on the emotions attached with Biriyani from a food lover's perspective. Kolkata Style Chicken Biriyani is very localized, like any other dishes. But this Biriyani is quite distinct in taste, and immensely popular among people in Kolkata. To be more precise, any Calcuttans living outside Kolkata, their visits back to the city remains incomplete without visiting Arsalan or Zeeshan or Nizam or Shiraz or Amenia restaurants. There are few newer restaurants too, but these are the age old places known for their amazing Biriyanis and Kabobs. This places are always crowded localities anytime you visit. In biriyani, Rice and meat slow cooked together with various spices. The basic recipe is same, but depending on the region the taste varies. Many regions in India, as well as countries like Pakistan, Afghanistan, Iraq etc have their own recipes. Tough the origins of Biriyani came from the Muslims in India, but now popular among all food lovers irrespective of their culture and religions. If you are not very keen about the taste, I would think Kolkata Biriyani is closer to the Lucknow Biriyani. One obvious difference is Kolkata Biriyani has Potatoes unlike other types. It also has hard boiled eggs in most places. In terms of taste, it is more aromatic, and less spicy when compared with Hyderabad style. There is a saying that if you have not washed your hand with soap multiple times after eating biriyani, it is not actually biriyani. What it implies is authentic Biriyani has generous amount of Ghee that is clarified butter. In my recipe today, I have tried to emulate the taste without getting overboard on the butter.

BIRYANI
Biryani also known as biriyani, biriani, birani or briyani, is a mixed rice dish that originates from the Muslims of the Indian subcontinent.This dish is especially popular throughout the Indian subcontinent, as well as among the diaspora from the region. It is also prepared in other regions such as Iraqi Kurdistan. It is made with Indian spices, rice, meat (chicken, goat, beef, prawn, or fish), vegetables or eggs.
Origin
The exact origin of the dish is uncertain. In North India, different varieties of biryani developed in the Muslim centers of Delhi (Mughlai cuisine), Lucknow (Awadhi cuisine) and other small principalities. In South India, where rice is more widely used as a staple food, several distinct varieties of biryani emerged from Telangana (specifically Hyderabad), Tamil Nadu (Ambur), Kerala (Malabar), and Karnataka, where Muslim communities were present. Andhra is the only region of South India that does not have many native varieties of biryani. During the Safavid dynasty (1501–1736) in Persia, a dish called Berian Pilao was made with lamb or chicken, marinated overnight — with dahi, herbs, spices, dried fruits (e.g., raisins, prunes, or pomegranate seeds) — and later cooked in a tandoor oven. It was then served with steamed rice.
According to Pratibha Karan, the biryani is of South Indian origin, derived from pilaf varieties brought to the Indian subcontinent by the Arab traders. She speculates that the pulao was an army dish in medieval India. The armies, unable to cook elaborate meals, would prepare a one-pot dish where they cooked rice with whichever meat was available.
According to Vishwanath Shenoy, the owner of a biryani restaurant chain in India, one branch of biryani comes from the Mughals, while another was brought by the Arab traders to Malabar in South India.
Ingredients
Ingredients vary according to the region and the type of meat used. Meat (of either chicken, goat, beef, lamb, prawn or fish) is the prime ingredient with rice. As is common in dishes of the Indian subcontinent, some vegetables are also used when preparing biryani. Corn may be used depending on the season and availability. Navratan biryani tends to use sweeter, richer ingredients such as cashews, kismis and fruits, such as apples and pineapples.
The spices and condiments used in biryani may include ghee (clarified butter), nutmeg, mace,pepper, cloves, cardamom, cinnamon, bay leaves, coriander, mint leaves, ginger, onions, tomatoes, green chilies, and garlic. The premium varieties include saffron.In all biryanis, the main ingredient that accompanies the spices is the chicken or goat meat; special varieties might use beef or seafood instead. The dish may be served with dahi chutney or raita, korma, curry, a sour dish of aubergine (brinjal), boiled egg, and salad.

Kacchi biryani
For kacchi biryani, raw marinated meat is layered with raw rice before being cooked together. It is also known as kacchi yeqni. It is typically cooked with chicken or goat meat and occasionally with fish or prawns. The dish is cooked layered with the meat and a dahi-based marinade at the bottom of the cooking pot. A layer of rice (usually basmati rice or chinigura rice) is placed over it. Potatoes are often added before adding the rice layer. The pot is usually sealed (typically with wheat dough) to allow it to cook in its own steam and it is not opened until it is ready to serve.
Tehari
Tehari, tehri or tehari are various names for the vegetarian version of biryani. It was developed for the Hindu bookkeepers of the Muslim Nawabs. It is prepared by adding the potatoes to the rice, as opposed to the case of traditional biryani.
Delhi biryani
The Delhi version of the biryani developed a unique local flavor as the Mughal kings shifted their political capital to the North Indian city of Delhi. Until the 1950s, most people cooked biryani in their home and rarely ate at eateries outside of their homes. Hence, restaurants primarily catered to travelers and merchants. Any region that saw more of these two classes of people nurtured more restaurants, and thus their own versions of biryani.
Hyderabadi biryani
Hyderabadi biryani is one of India's most famous biryanis; some say biryani is synonymous with Hyderabad.The crown dish of the Hyderabadi Muslims, Hyderabadi biryani developed under the rule of Asaf Jah I, who was first appointed as the governor of Deccan by the Mughal Emperor Aurangzeb. It is made with basmati rice, spices and goat meat. Popular variations use chicken instead of goat meat. There are various forms of Hyderabadi biryani. One such biryani is the kachay gosht ki biryani or the dum biryani, where the goat meat is marinated and cooked along with the rice. It is left on a slow fire or dum for a fragrant and aromatic flavour.
Kolkata biryani
Calcutta or Kolkata biryani evolved from the Lucknow style, when Awadh's last Nawab Wajid Ali Shah was exiled in 1856 to the Kolkata suburb of Metiabruz.Shah brought his personal chef with him. The poorer households of Kolkata, which could not afford meat, used potatoes instead, which went on to become a specialty of the Calcutta biryani. The Calcutta biryani primarily uses meat and potatoes.

Kalyani biryani
Kalyani biryani is a typical biryani from the former state of Hyderabad Deccan.Also known as the 'poor man's' Hyderabadi biryani, Kalyani biryani is always made from small cubes of buffalo meat.
The meat is flavoured with ginger, garlic, turmeric, red chili, cumin, coriander powder, lots of onion and tomato. It is first cooked as a thick curry and then cooked along with rice. Then given dum (the Indian method of steaming in a covered pot)
Outside the Indian subcontinent
Burma
In Myanmar (Burma), biryani is known in Burmese as danpauk or danbauk, from the Persian dum pukht. Indonesia
Nasi kebuli is an Indonesian spicy steamed rice dish cooked in goat meat broth, milk and ghee. Nasi kebuli is descended from Kabuli Palaw which is an Afghani rice dish, similar to biryani served in the Indian subcontinent.
Singapore and Malaysia
Nasi Briyani dishes are very popular in Malaysia and Singapore. As an important part of Malaysian Indian cuisine, they are popularized through Mamak stalls, hawker centres, food courts as well as fine dining restaurants.
Thailand
Biryani in Thailand is commonly known as khao mhok . It is commonly paired with chicken, beef or even fish and topped with fried garlic. The dish is common in Thai cuisine and often served with a green sour sauce.

Last Friday I had a chance to visit Barbeque Pride with my roommate and sister. I booked a table for three from zomato. Our booking was for 9:30 P.M. We barely reached at time. The restaurant is on the 3rd floor. After getting off the lift we could see some boys and girls gathering at the entrance. We showed up our booking confirmation message and got the table in 5 minutes. I don’t know how much it is crowded on a regular day but I would recommend you to have your reservation beforehand to be on the safe side.
The ambiance is quite nice and there is a lot of space around the sitting arrangements. This place serves mainly buffet. So here was the menu for the day we visited Barbeque Pride.
Starters: (Non-veg)
Andhra spicy prawns : We did eat one prawn dish in starter which was good. It was not spicy though! So I can’t tell if it was Andhra “Spicy” Prawns at all. Parslay Fish, Amritsari Fish : Comparing with other similar restaurants, I found the fish starters better. Karachi Botti : This was simply good. Mirch Masala Wing : This is basically spicy chicken wings, didn’t like it that much Guntur Chicken : Among the chicken starters, this was the best. I have had so many chicken dishes in my life but this got me in whole different level. It was a perfect blend of spices, almost tasted like some pickle. Mutton Galouti Kebab : I tried galouti kebab for the first time and I have never tasted something so good in my life. The mutton was so tender and mildly spiced that it melted in the mouth.
Starters: (Veg)
I don’t understand why the veg starters are always ignored. Like there should be equally tasty starters for vegetarian fellows! In the veg section they had-
Mongolian cottage cheese : It’s just tandoori paneer(cheese) Vietnamese mushroom : This wasn’t available. Tandoori bagicha : They didn’t serve it. BBQ Pineapple : This is grilled pineapple. This normally tastes good. I assume the pineapple they particularly used wasn’t of the best quality. Long stick pineapple : They didn’t serve it. Corn salt and paper : This is a common starter we get everywhere, This was fine Jamaican potato : This one stole the show. We loved it so much that we asked to repeat this one.
They also served grilled watermelon, which tasted nothing different from the regular ones. It wasn’t on the menu.
Soup:
They served Veg Hot and Sour soup and Chicken brown Garlic soup.
Chinese Non-veg:
In this section they had Chicken Yellow Thai Curry(Isn’t that Thai rather than Chinese?!), Chicken fried rice and chicken schezwan noodles. It tasted just fine.
Chinese Veg:
In this section they had Veg Thai rice, Veg Hakka Noodles and Veg Manchurian Curry. I couldn’t manage to taste them but here’s a photo of how it looked like.
Italian Non-veg:
In Italian non-veg, they offered chicken lasagna and chicken pasta. I didn’t find the lasagna cheesy enough. Taste wise it was fine. The pasta was okayish.
Italian Veg:
Here we had veg risotto and veg pasta. The risotto was fine. Surprising the veg pasta was better than the chicken one.

By this time, we were almost full. We were yet to taste half of the dishes. For the Indian main course we could just taste the dishes to spare a little space for the desserts!
Indian Non-veg:
Chicken Dum Biriyani : This is Hyderabadi special biriyani, the smell is everything!
Mutton keema Biriyani : In a buffet, this was an uncommon thing to see. It had minced mutton pieces and tasted better than the previous one.
Nihari Gosht, Murgh Baghmati : They are just fine to accompany the biriyani, Egg Masala : Another dish that I don’t usually see in buffet. It was good though Fish pulusu : South Indian style fish curry. A bunch of Bengalis can never be impressed with that. So I’m not commenting on the taste.

Dosa lovers, pay attention! This place has live dosa counter as well. In wish grill you can have emu, rabbit, octopus, chicken, squid, prawns, egg and/or paneer(cheese), broccoli, Corn, mushroom, baby corn. Suprisngly they had live pizza counter that baked mini pizza with your choice of topping!
Desserts:
These are desserts available- Chocolate brownie – Good. Assorted Pastry – Okayish. Mix fruit cheese cake – Good. Angoori gulab jamun – Nothing can beat the taste of hot gulab jamun. Jalebi – Crispy and hot, Served just taking out of the sugar syrup Fruit custard – good Fresh cut fruit – Watermelon, Muskmelon (did not eat) Kesari phirni– Must try Chocolate pie – good Gajar ka halwa – Must try Stone ice cream – Customization was available for this. Ours was good.

When my Dad was in Hyderabad, My Dad @deepak.desai.9028194 visited the Paradise restaurant to eat the very popular Hyderabadi biryani, which is a must have for everyone visiting the city. We ended up talking, or rather, bragging about the biryani from our own states. The Karnataka claimed that their biryani was the best of all, with its subtle masala and distinctive addition of asserted that the biryani back home, with liberal amounts of ghee and cashew, and sometimes egg, was unbeatable. Of course it was difficult to argue with the Hyderabadi @pavandd ,I said that marinated raw meat and rice were cooked together, along with saffron to add to the flavour and aroma of the Hyderabadi biryani. And I thought it would be childish to say, “You are all wrong folks. My dad makes the yummiest biryani of all”, so I kept quiet. Forgive my seeming lack of modesty, but I have not had a biryani more delicious than the one my father makes. Make a paste of coriander leaves, mint and also eco-friendly chillis.

Add ginger-garlic paste and sauté for couple of minutes.
Now include the mint paste, powder masalas and also salt. Mix and cook till oil separates.
Add the steamed eggs and layer them with the masala.
In a various skillet pour some oil and also fry onions till brown.
To construct the meal, layer the base of the pan with egg masala then placed some rice over it. Repeat till the rice as well as masala are consumed. Next add rice with double quantity of water. Cover and cook on tool flame.
Then boil 3 eggs as well as maintain apart. Place remaining eggs into a frying pan making scrambled egg.
Mix rushed egg with prepared rice.
Arrange rice in center of serving meal and decorate with boiled eggs.
4. Special Egg Biryani:
Ingredients:
3 tbsp Oil
1.5 cups rice
1Ginger garlic paste
½ cubed capsicums
1 onion
2 green chilies slit
5 boiled eggs
1 tomato chopped
⅛ tsp ground turmeric
½ tsp red chili powder
1 1/2 tsp. Biryani masala powder
mint as well as coriander leaves chopped
Salt to taste
3 tbsp curd
2 ½ cups water
1 star anise
1 bay leaf
½ tsp. shahijeera
4 green cardamoms
4 cloves
1 inch cinnamon stick
1 strand of mace
Steps:
Heat oil as well as fry the flavors as well as onion till brown.
Add ginger garlic paste and also capsicums. Sauté.
Then include tomatoes, mint, red chilli powder, turmeric, salt and yogurt and also cook till mushy.
Add eggs, masala and fry.
Pour water, add rice and cook without covering.
When little water is left, cover and also chef on low flame.
Serve hot.
5. Egg Biryani With Coconut Milk:
Ingredients:
1 cup of premium basmati rice
2 or 3 tsp of pure ghee made of cow's milk
Cinnamon, small stick
cloves 4-5 nos
Cardamom 3-4 nos.
Star anise
A large bay leaf
Sprig of fresh coriander leaves (cilantro)
Two sprigs of mint
Green chillies, 2 nos
Garlic, 3 cloves
Ginger, 2 inches
Large onions, finely sliced
Ripe tomatoes, 2 large- cubed
Red chilli powder, 1/2 tsp
Turmeric powder, 1/4 tsp
Jeera or cumin powder, 1 tsp
Fennel seeds, 1 tsp
Coriander powder, 1 tsp
Thick and fresh coconut milk, 2 cups
2 tsp of biryani masala
Ginger garlic paste, 1 tsp
3 large eggs
Cashew nuts - a handful
Steps:
Wash and soak basmati rice.
Heat 2 tbsp ghee in a pan and also add the cashews. Fry till gold then drainpipe as well as maintain aside.
Add onions to the same frying pan and also fry till gold. Keep aside.
The onions as well as cashews will be utilized for garnishing.
To the same frying pan include more ghee and also sauté the spices.
Make a paste of coriander leaves, mint leaves, green chillies, ginger, garlic as well as salt.
Add the ground paste once seasonings are fragrant. Sauté.

The word Biryani came from the the Persian word birian which means fried before cooking.There are various theories related to the origin of this dish.Many historians believed that biryani originated from Persia and was brought to India by Mughals.According to some historians, the most popular legend in the story of Mumtaz mahal,Shah Jahan’s queen Mumtaz once visited the army barracks.She found that the Mughal soldiers look undernourished.In order to provide them a balanced diet,she ask the chefs to prepare a dish with meat and rice.the dish was cooked up with ghee, spices and saffron and cooked over wood fire.Now a days we get many kinds of Biryani in our country.These biriyani are very popular now in our country.
Kacchi biryani
Kacchi biryani also known as kacchi yeqni. Kacchi typically cooked with chicken or goat meat but rarely with fish or prawns. In a kacchi biryani, raw marinated meat is layered with raw rice before being cooked together. Potatoes are often added before adding the rice layer.

Tehari
Tehari was developed for the Hindu bookkeepers of the Muslim Nawabs. It is the vegetarian version of biryani called as Tehari, tehri or tehari are biryani. In Kashmir, tehari is sold as street food.

Tehari became more popular during World War II, when meat prices increased substantially and potatoes became the popular substitute in biryani. It is prepared by adding the potatoes to the rice as opposed to the case of traditional biryani, where the rice is added to the meat.
Beef Biryani
In Hyderabad, it is famous as Kalyani biryani, in which beef (buffalo/cow meat) is used. sometime in the 18th century this meal was started after the Kalyani Nawabs of Bidar came to Hyderabad.

The Kalyani biryani is made with small cubes of beef, regular spices, onions and lots of tomatoes. In Kerala, beef biryani is very famous. It has its own distinct tomato, jeera and dhania flavour. The Bhatkali biryani is a special biryani where the main ingredient is onion. It can be made by beef, goat, chicken, titar, egg, fish, crab, prawn and vegetable biryani.
Dhakai Biryani
It is quite impossible to being a Bangladeshi and never heard about Haji biryani, the most popular biryani in dhaka city. Hajir biryani is a favourite among Bangladeshis living abroad. The recipe includes highly seasoned rice, goat meat, mustard oil, garlic, onion, black pepper, saffron, clove, cardamom, cinnamon, salt, lemon, dahi, peanuts, cream, raisins and a small amount of cheese (either from cows or buffalo).
