In 20 minutes I share everything I wish I knew before I started designing my permaculture food forest.
This video covers strategies for capturing and storing water, improving and feeding your soil, creating a baseman for capturing your observations, swales, contours, guilds and layering your food forest and working with succession as well as some syntropic agroforestry techniques that you can use in your backyard.
A permaculture food forest requires upfront work, but the long-term rewards are huge! That is why I believe it’s the easiest way to grow food. No annual tilling, no toiling under the hot sun year after year, no need to purchase inputs once your forest is established. Once you set up a successful system, it will thrive for generations to come.

You don't want to boil the acorn meat, you want to use cold water to leech the tannins. Once you've got the shells off, puree them in cold water and place the resulting liquid in a bucket of cold water, the closer to freezing the better. (This is why I do this in late fall, so I can leave the bucket outside with a lid over it.)
Once to twice a day, pour off the cold water and add fresh cold water. Taste the mash after one week. If bitter, even a little bit, continue changing the water daily until it is sweet and nutty. Remove as much water as possible and dry at 100°F. (You can make solar dehydrators but I'd only used mine in the summer so no idea how well they work in Croatia in the fall).
Store in an air tight container in the fridge because acorn fats can go rancid at room temperature so even once fully processed and tasty, they're really only good for six months though they've kept for up to twelve in the freezer.
Also, I don't remember if you have a nut cracker or not, but if you don't, crack them on a clean wooden stump with the pointy side down. When you hit it like that, the point digs into the wood and so they crack pretty cleanly.
Also also, it's a gluten free flour so keep that in mind when making breads from white flour recipes.
Acorn info yeah!!! Thank you so much for all the extra info, I appreciate this so much. I read that it's preferable to use cold water to preserve all the vitamins, but I decided it's okay if I just get the minerals, because I get the vitamins from all the other stuff I eat.
I love all the additional info though!
I didn't know they go rancid so easy, that is a little worrisome. I know when they're cured in their shell they can last for the entire winter, so I guess it would be okay to just prepare the bits I wanna eat, and leave the rest dry until I want to use them.
I really appreciate the cracking advice too, I've been trying to get a hold of a good nutcracker, but for now I only have a hammer. Gluten-free is fine for pancakes! I'll keep it in mind about bread :)
