We’ve been making some amazing dinners in my house recently, and rather than spam your dashboard with individual posts for each meal, I decided to do a compendium.
Top row:
1. vegetarian calzones (cheese and sauce, plus mushrooms, spinach, fresh tomatoes, and fresh garlic) with a side salad
2. Thai green curry, and spring rolls (with radishes from our garden inside!)
Second row:
1. Southwest burger (chili lime aioli, guacamole, grilled peppered bacon, tomato, grilled red onion, roasted poblano and serrano peppers, pepper jack cheese) and corn on the cob
2. homemade ravioli (filled with ricotta, lemon zest, mushrooms, and asparagus) topped with homemade vodka sauce, served with bread, Italian sausage, and salad
Third row (all from the same evening):
1. mint julep
2. the first harvest of mustard greens from our garden
3. Carolina-style BBQ chicken, biscuits, greens (made with the greens from our garden!), mac and cheese (with bacon, green onions, sharp cheddar, and smoked gouda)

Days 1-9
Imagine that, me with a late start. ANYWAY. Where to begin? I guess just stating what I’ve been up to and my goals. I made the choice to take control of my life and make a real change this year. I have a purpose and the motivators to get me where I need to be and I’m determined to lose this weight and become a healthier me before I’m 35. I’ve struggled with my weight and relationship with food a really long time. A couple of years ago I lost about 50 pounds, but life happened and depression beat my ass up a little bit so I teetered. This battle with BED (binge eating disorder) is a rough one and it seems never-ending, but we out here. I’ve been focusing on a bullet journal format to keep track of my goals for the year, but I also wanted to incorporate some type of daily reflection to help keep myself accountable and busy (so, Hi!). 
For the month of January, I am solely keeping myself accountable for my calorie deficit. My current cut is a big one, mainly because I’m not exercising yet and I work 40 hrs. a week at a sedentary job. I was trying for 1650 calories a day for the first week and was having trouble meeting that and needed to add in more protein so I upped it to 1700 calories. Baby steps seem to bring me the best results so I start out small. I’m also trying to get back into the swing of meal prepping, so there’s a lot going on in my head right now as I create recipes and try to balance all my calories for the day.
During week one, I had a meal prep that consisted of 2 rotating meals for M-F and daily snacks since I don’t really like to eat breakfast. Snacks were yogurts, fruit, cottage cheese, and nuts.

As you can see, for the most part I’m trying to stick to a whole diet. I want to try and reduce the amount of processed foods I’m eating and the amount I’m dining out because it’s really gotten out of hand. As long as I meal prep, it seems easy though and I really like that. I created a “picking” grocery list to assist in grocery shopping and meal planning for the week. I’m trying to spend an average of $100/week on my grocery trips to help save money. 
This week I took a little more time to look back on my mistakes from week one. I added more protein to my diet. Although, week one was a success. I lost 10.4 pounds as of January 7th. WOOOHOOO!!!

I purchased some Ghost Whey Protein....and OH. MY. GOD. The “Fruity Cereal Milk” flavor is the bomb.com, literally like drinking the milk after a bowl of Fruity Pebbles. This week I’m trying to have my daily intake be something like this:
Breakfast: Protein Shake with Fairlife 2% Milk +/- Coffee
AM Snack: 2 Hardboiled Eggs with Mustard and Pickle
Lunch: Meal Prep 1 or 2 +/- Fruit
PM Snack: Yogurt with Almonds
Dinner: Meal Prep 1 or 2 
Late Snack: Cottage Cheese with Strawberries
This time I just gotta stick with it. I’m gonna show up every day and hold myself accountable. I’m going to take baby steps and forgive myself for bumps along the way. This is a lifestyle change, not a diet. Until tomorrow!

Age- 18 (immortal)
Location- Elis, Olympius
Personality- Out of all his brothers, Eurus is more comfortable being behind the scenes. He's independent, sensitive, soft spoken, and considerate of other people's feelings. He loves being outdoors. He's currently single.
Being the god of autumn & the east wind, he has many abilities. He can fly due to his large dark green wings. He also has the ability of phytokinesis (the power to control leaves), limited aerokinesis, limited hydrokinesis, lightning redirection, and the ability to create & control rainstorms. He can also shapeshift into a pegasus as well as communicate with them.
Eurus lives in a secluded cabin house deep in the forests of Elis. Inside, there's a continuous cool breeze blowing & there's lots of leather furniture. Dark shades of blue, green, brown, and gray are major colors.
He's the youngest of his brothers and doesn't like being treated like the baby of the group. Eurus is definitely closer to Boreas (god of the north wind), as he visits him often in the Underworld. One of his greatest wishes is for Bo & Notus (god of the south wind) to be closer again. Eurus has a decent relationship with his mother Eváeros (goddess of air & the zodiacs), despite him knowing that she has a tendency to play favorites among the brothers. He especially likes when she flies over for a visit, bringing with her the delicious and airy lemon souffle!
Aside from his brothers, he doesn't have much of a relationship with the others in the pantheon. He's friendly enough with Deipneus (god of cooking & breadmaking); loves his chicken teriyaki sandwich!, Pothos (god of longing & yearning), Melpomene (Mel) (muse of tragedy), Dionysus (god of wine), Hymenaeus (Naeus) (god of weddings), Urso (god of bears), Dike (goddess of justice), Aeolus (god of wind), Ekecheiria (Keke) (goddess of truce & armistice), Tithonus (god of insects), Carpo (goddess of autumn & fruits); loves her pumpkin bread recipe, sometimes Artemis (goddess of the hunt & moon), & even Gelos (god of laughter).
His go-to drink is an americano. He also likes green iced tea, beer, and ginger ale. His usuals from The Roasted Bean include a large roast coffee (two creams, two sugars) & a medium chocolate mocha.
His favorite treat is chocolate fudge brownie ice cream.
His favorite breakfast food is belgian waffles (topped with a pear based maple syrup). Another thing he likes to do is make a "sandwich"- scrambled eggs (with ham & onions), hash browns, and sausage gravy sandwiched between two belgian waffles. It's a big hit with his brothers!
For work, Eurus models for Platinum Alchemy as well as ViVoTrack. He also endorses Strengthify water.
He's had one serious relationship- with Chelone (goddess of tortoises). He also had a former crush on Britomartis (goddess of mountains, hunting, & fishing nets) as well as a crush on Palaestra (goddess of wrestling).
He's the only one that Zeph's been completely honest with regarding his relationship with Iris. Eurus feels like he should stop stringing her along, giving her false hope.
His favorite meal is beef & broccoli with lo mein noodles. He also enjoys white rice with a grilled chicken and kale salad (drizzled in cucumber basil dressing) & steak with garlic roasted potatoes. He also likes the veggie burger meal from Olympic Chef.
In his free time, Eurus enjoys camping. He sometimes visits New Olympus to camp out in the Celestial Woods (because he gets to spot all the constellations). He also enjoys archery, football (soccer), hiking, mountain climbing, kayaking, hunting, lacrosse, reading, painting (mostly landscapes), & even knitting.

You can still enjoy your favourite dishes but without the meat. The good news is that human imagination knows no bounds in being able to duplicate recipes and eatery favourites without the meat, so you can enjoy your new meatless lifestyle without feeling deprived. Pretty much anything you used to eat can be duplicated with plant-based ingredients, including meatballs, and burgers.
Here are some great substitutions for meat in your favourite dishes:
Pizza. The sausage on pizza can be replaced with soy sausage or simply topped with vegetables.
Burgers. Hamburgers can be made with veggie burgers instead of beef, or even enjoyed with a pile of tomatoes, lettuce, onions, and pickles on a fresh baked bun. Aubergine makes a wonderful substitute for beef patties in burgers, as do potatoes, and Portobello mushrooms.
Tacos. Substitute beef in tacos with black beans.
Tofu. Tofu is a protein that is made from soybeans, virtually any recipe that calls for meat can be made with this plant-based protein. Tofu can be used to create tofu nuggets, or used in chunks in stir-fry to replace steak or chicken. Tofu is very good at absorbing flavours of any kind, such as sauces and marinades. TVP. TVP (Textured Vegetable Protein) is a vegetable protein made from soy, can be obtained in all shapes and sizes, and makes a great replacement for any cut of meat, including minced beef. Look for specific recipes online to create tasty vegan dishes with this diverse plant-based protein.
Seitan. Seitan is another great meat substitute made from wheat gluten. Seitan takes on flavours really well and makes a great replacement for pork, chicken, and beef. Recipes like Seitan steak with red wine sauce can quickly make you forget top sirloin. Seitan cacciatore turns an old Italian favourite vegan.
Mushrooms. Mushrooms are very meaty, rich and have an earthy flavour that makes them a perfect beef replacement. In fact, you can build an entire main dish out of a large Portobello mushroom. They can be stuffed with any type of vegetables, such as peppers, spinach, onions, zucchini, and tomatoes and baked. If you eat dairy as part of your plan, melt mozzarella or cheddar cheese over them for added goodness. Stuff them with nuts like pecans for a wonderful rich nutty flavour. They can be grilled with garlic and vegan butter and piled over a hot French or whole grain roll to make a filling and tasty sandwich.
Lentils. Lentils make great meat substitutes. Lentils are healthy, loaded with nutrients, a quality protein, and are hardy enough to replace meat in many dishes. They are cheap and come in a wide variety and colours, including, red, yellow, brown, and green. They can be used in chilli, burgers, soups, stews, Shepherd’s pie, and meatballs for pasta dishes.
Beans. Beans are fantastic sources of protein and make great meat replacements in vegan diets. Choose from the very inexpensive and filling varieties, such as kidney, black, pinto, or aduki beans along with black-eyed and chickpeas, just to name just a few. Mung beans provide the added benefit of Omega-3 fatty acids.
Beans make for hearty soups, stews, and chillies. Chickpeas make a great tuna salad, and black beans go great in tacos and chilli instead of beef. Hummus, which is made from chickpeas, makes a great substitute for mayonnaise on burgers and sandwiches. There are endless varieties of bean salads that add colour and flavour to a cool summer dish.
Vegetables. Roasted vegetables can serve as a main dish, and when they are flavoured correctly can really wow your taste buds. Mushrooms, aubergine, beets, and potatoes both white and sweet can be made the stars of any meal, including breakfast, lunch, and dinner. With the use of herbs, spices, and sauces like Balsamic vinegar and soy sauce, the possibilities become endless in using hearty vegetables to create vegan meals.

Araka Araka is awarded one-star in Michelin Guide İstanbul 2023. With fresh seasonal herbs and vegetables, chef Zeynep Pinar Tasdemir prepares a menu combining hot, sour and spicy flavours. For the Chef, preparing food is an exceptionally personal experience so everything she serves is a part of her identity.
The location Araka is also in a peaceful neighborhood of Yeniköy in Istanbul. The whole experience will be like escaping from the city’s chaos to a quiet village for enjoying a special meal. When you get there try Araka’s duck confit with vine leaves, beetroot and raspberry. Don’t forget to make a reservation since the Michelin star they got, the place will quite popular this year.

On that note I made food tonight, so here's a list of some of my favorite college food staples
before you continue, know that this is a long list:
-pasta with sauce
-caccio e Pepe but I used parmagean and garlic powder with milk and flour too
-buiscuits and gravy (the biscuits are from a can the gravy is homemade)
-ramen noodles with egg and maybe some green onionor seaweed and hot dog or ham
-ramen noodles with sirracha mayo and cheese sauce and maybe egg and hot dog
-eggs in a basket
-tamago gohan (japanese styled egg over just cooked rice, then you stir them together and the really hot rice cooks the egg for the most part while you stir)
-peanut butter and jelly (enough said)
-discontinued homemade dunkin donuts sandwich with pesto, cheese and fire roasted tomatoes (I owe this sandwich my life)
-guacamole and tortilla chips (this bad boy keeps you full forever)
-Onigiri with salmon and spicy mayo (a lot of work but only needs three ingredients if you don't count salt)
-pancakes (yay food!)
-tim hortans biscuit sandwich (sausage, egg, american cheese, ketchup)
-ham and cheese sandwich
-pan con frijoles (refried black bean paste and eat with sour cream or queso fresco, or grated parmesean if your desperate on top with whatever bread you have. It's also amazing on sandwiches or as a toast topping. preferribly cook with onions and garlic)
-hotdog and egg pizza (eggs mixed before you put them in the pan. cut hotdogs into small circles and place like you're putting pepperoni on a pizza. zigzag ketchup on top and eat with a fork and knife. add toasted tortilla that was cut into triangles for extra crunch.)
-grilled cheese and tomato soup
-miso soup with green onion and tofu and seaweed
-steamed pork buns
-Crisp Sandwich (sandwich made with butter and chips. Preferably barbeque or Salt and vinegar. It kept me alive for a week so you can do it, but not recomended to live on. Tastier than you think if the bread is sturdy enough. Target bread is not but dollar tree bread suprisingly is think enough and tastier too)
-japanese curry with potatoes, carrots, and either beef cubes or breaded pork and rice
-katsudon
-butter chicken
-chicken tika masala
-mashed potato patty fried in a pan with a fried egg on top. my mom's lazy dinner night specialty
-salmon with pesto butter on top with mashed potatoes ( I miss being able to eat costco salmon)
-alfredo sause and pasta with beef
-beef stroganoff but I made it with alfredo sauce, barbeque sauce, and worschechire sauce instead and something else that I can't remember but god it was good and filling.
for sweet tooth moment:
-pancakes with m&ms to make you feel special
-peanut butter and nutella (or chocolate frosting if you're desperate) sandwich
-toast with nutella
-chocolate frosting sandwich
-australian fairy bread for fun (you can use vanilla frosting if you can, it's okay, it doesn't have to be the butter if you're desperate)
-frosting
-corn bread
pancakes with syrup (it works as a treat if it's not breakfast
-geletan
-kids sugar cereal
-steamed red bean buns
-cookies (preferrably chewy bakery styled ones but the hard dollar tree ones will do)
-cheap off brand ice cream
Drinks:
-any drink concentrate you put into water (always iced)
-matcha latte
-coffee with milk and sugar
-just straight up milk my beloved
-orange juice
-berry smoothie with greek yogurt and sugar (tim hortans style my beloved)
