Think of this dish as a tribute to the undervalued but frequently used spice, black peppercorn. The beef is marinated in yogurt, ginger, garlic, and freshly ground pepper before being seared all over to create a deep, rich flavor for the stew. After that, the liquid is reduced to a thick, rich sauce and the vegetables are cooked until soft. This stew, which takes its cues from Indian cooking, is cooked with garam masala powder, which harnesses the potency of spices like cumin, bay leaves, cloves, and cinnamon to produce a flavorful, complex dish. Add the red bell peppers and zucchini last for a colorful finish. Accompany with warm rice.

Chicken and Butternut Lentil Dahl

Spicy and comforting on a wet and grey day, this vibrant Chicken and Butternut Lentil Dahl will warm you up as you come home from a walk or a potter in the garden under a light drizzle!
Ingredients (serves 2):
2 tablespoons ghee
1/2 large onion
1/2 red Bell Pepper
2 teaspoons Garam Masala
1 teaspoon ground tumeric
1/2 teaspoon cumin seeds
1 large garlic clove, minced
¾ teaspoon Red Chili Flakes 
2 heaped teaspoons Ginger Paste
4 chicken drumsticks
1 thick slice of a lare butternut squash
1/3 cup split red lentils
1 teaspoon coarse sea salt
1/2 teaspoon freshly cracked black pepper
1 cup coconut milk
2 cups water
Melt ghee in a large pot or Dutch oven, over medium heat.
Peel and thinly slice onion. Add to the Dutch oven, and cook, stirring often until softened, about 3 minutes.
Seed and chop Bell Pepper. Increase heat to medium-high, and stir chopped Bell Pepper into the Dutch oven. Cook, a couple of minutes.
Add Garam Masala, ground tumeric and cumin seeds, and fry, one minute more.
Stir in garlic and Red Chili Flakes. Cook, another minute. Then, stir in Ginger Paste.
Add chicken drumsticks, and cook, to brown on all sides.
Peel and cube butternut squash. Add to the Dutch oven, along with red lentils, stirring well to coat in ghee and spices. Season with coarse sea salt and black pepper.
Then, stir in coconut milk and water. Bring to the boil.
Once boiling, reduce heat to medium-low, cover with the lid, and simmer, 25 minutes.
Serve Chicken and Butternut Lentil Dahl hot, with Paratha.

Chicken liver boiled in cocoa (cooking)

Place the chicken liver in a thermal cooking pot soaked in saline and natural salt, sprinkle with cocoa powder, add a few slices of ginger, two yegoma leaves (chopped), and garam masala, and start the cooking process. After cooking, set aside and sprinkle with garam masala and cloves. Soft and odorless.
Note: I added cocoa to deodorize it, but there was no trace of it left, so I didn't know how effective it was.
鶏レバーのココア煮(料理)
生理的食塩水、天然塩を浸した保温調理鍋に鶏レバーを入れ、ココアの粉をまぶし、生姜切り身数個、yegomaの葉2枚(切り刻んだもの)、ガラムマサラを入れ、調理工程に入る。調理後、取り分けてガラムマサラ、クローブを振る。柔らかくて、臭みがない。
注:ココアは消臭のため入れたが、跡形もなくなり、効果のほどは解らなかった。

Spicy Prawn Sandwich

It's hot and sunny, the skies are a cloudless blue, the ideal weather for a picnic! And this Spicy Prawn Sandwich makes a delicious, mouth-watering al fresco meal, whether it's by the sea or in your own garden! And you can even bring it indoors to tuck into it whilst watching the Rugby World Cup opening clash between Les Bleus and the All Blacks!!! Happy Friday!
Ingredients (serves 1):
a generous bunch Garden Cilantro
1/4 long red hot chili pepper
1 1/2 tablespoon olive oil
1/2 small lemon
a dozen fresh prawns, steamed and cooled
1/4 cup thick plain or Greek Yoghurt
2 heaped teaspoons Mango Chutney
1/4 teaspoon Garam Masala spices
1 teaspoon olive oil
100 grams/3.5 ounces freshly baked Baguette
a pinch of salt and freshly cracked black pepper
a few leaves gem lettuce, rinsed and spin-dried
1/4 cucumber
Finely chop Cilantro, and spoon into a medium bowl.
Thinly slice chili pepper, and add to the bowl. Add olive oil, and squeeze in the juice of the lemon halve. Give a good stir.
Peel prawns, and add them to the bowl. Toss well to coat in herbs, chili and oil.
Place in the refrigerator, to marinate, a couple of hours.
Spoon Greek Yoghurt into a small bowl. Add Mango Chutney and Garam Masala spices. Give a good stir, gradually adding olive oil, until well-blended. Set aside.
Halve Baguette, without cutting through completely. Generously spread mango mixture on both sides. Arrange gem lettuce leaves onto the bottom side.
Remove marinated prawns from the refrigerator, and season with salt and black pepper.
Thinly cut a few slices cucumber, and arrange them on top of the lettuce. Finally, fill generously with spicy marinated prawns, pressing gently to close sandwich.
Enjoy Spicy Prawn Sandwich immediately, or wrap tightly in cling film if bringing as a picnic!
