favorite food i cooked (2022)
in the last two hours of 2022, i will frantically write a jumble of reflections or lists since i’m hanging out in the psych ER alone anyway :p 
in no particular order:
cumin lamb “pie” with mashed potatoes & scallion pancake - i made this for pie night and i’ve been dreaming of this for the last several years - it turned out so much better than i expected (though i did cheat with using XFF spicy oil, haha). toasting the cumin really adds a lot, and this will definitely be in my routine because it is pretty easy once you slice all the lamb :) 
spicy brazilian cheesy bread - the recipe i’m using now is totally foolproof, and it’s amazing that you can use feta and add any spicy sauce (truff, gochujang, harissa, etc) and it will turn out so flavorful and delicious - so easy! 
roasted brussels sprouts with maple-soy caramel glaze - ridiculously easy for how complex and tasty the flavors are - i’m obsessed with this glaze. 
thit kho grilled cheese sandwiches with BBH dip - definitely the most time-consuming dish but so, so worth it. will always want this if i’m throwing a lavish dinner party :) 
red curry coconut crab quiche - another ridiculously easy hit - i think i’ve made this like 3-4 times since i first made it. a little pricy with lump crab but definitely worth it :) 
scallion pancakes coconut short rib adobo quesadilla - scallion panckes are waaay underrated as a carb vehicle - add some guac, pickled caramelized red onions, and spicy mayo, and this is the most delightful comfort food 
kimchi chorizo spam arancini - so fun making different flavored arancinis - another arancini flavor will probably feature on next year’s list :p 
upside down pineapple guava mochi cake - incorporating guava nectar into the mochi cake really added so much, and the caramelized pineapple - yum! 
tonka bean coconut ice cream with candied macadamia nuts & marshmallows - tonka bean just really elevates everything. this did not need additional toppings to make it tasty but it helps :) 
chawanmushi with soy-marinated ikura - the real star is the dashi from okume :D but really this is so comforting and lovely

Smoked Prime Rib Recipe, Without a Smoker

Making prime rib at home can be intimidating, but we’re going to show you a simple grill-to-oven method that is virtually foolproof. This may become your new go-to recipe when you want to impress!
This prime rib starts on a gas or charcoal grill with wood chips to infuse it with a smoky flavor. If you have a smoker, by all means use that for the smoking portion.
It is then finished in the oven to get a crispy browned exterior and a juicy, medium-rare interior. A variety of wood chip varieties can be used for beef, but for this recipe we like cherry, apple or pecan. For a bolder flavor, you can try hickory or oak.
We highly recommend salting the prime rib the night before and letting it rest in the fridge in a pan with a rack. This will give the meat more flavor and be more tender after cooking. We serve the prime rib along with our .
Ingredients
5 lbs. boneless prime rib
Salt
1/4 cup unsalted butter
2 Tbsp. fresh thyme leaves
3 Tbsp. chopped sage leaves
2 tsp. Black pepper
8 cloves grated garlic
Directions
Pat the prime rib dry. Liberally salt your meat on all sides and place it on a rack in the fridge overnight.
The next day, take the meat out and allow it to rest at room temperature for an hour. Melt the butter and mix in the thyme, sage, pepper and garlic.
Rub the mixture all over the meat and place it in a cast iron pan. We used a cast iron grill pan since it was too big for our regular cast iron pan.
  While the meat is resting, soak some wood chips for about 20 minutes. Beef can withstand many types of wood for smoking. Many people like using hickory or oak, but for this we like fruit tree chips like apple, cherry, or pecan.
For less than $20, you can purchase a smoker box, which is a metal box with holes that holds wood chips in your grill. Or you can do what I did and out of heavy-duty aluminum foil.
Either way, drain your wood chips thoroughly. Place them in the smoker box or in the center of a large square of foil. Wrap the wood chips in the foil, then use a knife to poke some holes in the top of the foil packet. This will allow fragrant smoke to emanate from the package.
Turn one side of your gas grill on to high heat. Place the foil packet with wood chips on the side that’s heating up. Cover the grill and allow it to come up to temperature and for the wood chips to start smoking. This will take 30 minutes or so.
Once you see a good amount of smoke coming from the foil packet, place the pan with the meat on the opposite side of the grill (the side that isn’t heated up). Cover and allow the meat to smoke for 30 minutes, then flip the meat over and smoke for an additional 20-30 minutes.
Preheat your oven to 325 degrees. Use a meat thermometer with a heat-safe probe and place it in the center of the thickest part of the meat. Place the pan and meat in the oven and allow it to cook until the internal temperature is reached. Aim for 115-120 degrees for a medium-rare roast. Once the temperature is reached, take the meat out of the oven and allow it to rest for 15 minutes.

Smoked Prime Rib Recipe, Without a Smoker

Description
Juicy smoked prime rib made in a regular grill without a smoker.
Ingredients
5 lbs. boneless prime rib salt ¼ cup unsalted butter 2 tbsp. fresh thyme leaves 3 tbsp. chopped sage leaves 2 tsp. black pepper 8 cloves grated garlic
Instructions
Pat the prime rib dry. Liberally salt your meat on all sides and place it on a rack in the fridge overnight.
The next day, take the meat out and allow it to rest at room temperature for an hour. Melt the butter and mix in the thyme, sage, pepper and garlic. Rub the mixture all over the meat and place it in a cast iron pan (we used a cast iron grill pan since it was too big for our regular cast iron pan).
While the meat is resting, soak some wood chips for about 20 minutes. Beef can withstand many types of wood for smoking. Many people like using hickory or oak, but for this we like fruit tree chips like apple, cherry, or pecan.
For less than $20, you can purchase a smoker box, which is a metal box with holes that holds wood chips in your grill. Or you can do what I did and make your own out of heavy-duty aluminum foil. Either way, drain your wood chips thoroughly. Place them in the smoker box or in the center of a large square of foil. Wrap the wood chips in the foil, then use a knife to poke some holes in the top of the foil packet. This will allow fragrant smoke to emanate from the package.
Turn one side of your gas grill on to high heat. Place the foil packet with wood chips on the side that’s heating up. Cover the grill and allow it to come up to temperature and for the wood chips to start smoking. This will take 30 minutes or so.
Once you see a good amount of smoke coming from the foil packet, place the pan with the meat on the opposite side of the grill (the side that isn’t heated up). Cover and allow the meat to smoke for 30 minutes, then flip the meat over and smoke for an additional 20-30 minutes.
Preheat your oven to 325 degrees. Use a meat thermometer with a heat-safe probe and place it in the center of the thickest part of the meat. Place the pan and meat in the oven and allow it to cook until the internal temperature is reached. Aim for 115-120 degrees for a medium-rare roast. Once the temperature is reached, take the meat out of the oven and allow it to rest for 15 minutes.
Slice the meat as thick or as thin as you’d like. Top with and serve with your favorite sides.
  Notes
We highly recommend salting the prime rib the night before and letting it rest in the fridge in a pan with a rack. This will give the meat more flavor and be more tender after cooking.

Often, the most popular Italian dishes feature high-carb foods and ingredients. In general, the following are the most common keto offenders are:

What to Eat Before the Appetizer
Most Italian restaurants will bring you complimentary bread or breadsticks, which both should be avoided on keto. Ask them to bring some fresh olives and olive oil instead. Olives are the perfect salty, high-fat snack to set you up for a delicious keto Italian meal.
Keto-friendly Appetizer Orders (Hot, Cold, Salads, and Soups)
Antipasto platter — Typically contains an assortment of cured meats, cheeses, and marinated vegetables such as artichokes and peppers. Avoid any dried fruits, mostarda, jams, or bread.
Carpaccio — Aged, raw, thinly sliced beef or fish, usually served with an olive oil dressing, cheese, and a few low-carb vegetables.

Chicken or Veal Saltimbocca — Meat wrapped (or lined) with prosciutto and sage, cooked in a marsala-based sauce. Double-check to make sure the meat isn’t covered in flour or breaded, as this dish is sometimes made in this way.
New York Strip Steak or Ribeye — Ask for it to be served with steamed broccoli, asparagus, or a side salad. Hold the bread, potatoes, risotto, or wine reduction it may come with.
What About Italian Dessert?
Ordering a low-carb dessert at an Italian restaurant will be much more difficult, so I recommend skipping it and having a homemade keto dessert instead.
That being said, there are a couple of simple options that most restaurants won’t mind preparing for you:
Berries and cream — Ask for a small serving of fresh berries and sugar-free whipped heavy cream or mascarpone cheese.
Espresso (no sugar or milk) — Skip the cappuccino, and order a shot of Italian espresso black. Add some heavy cream if you find the espresso to be too bitter.

If the menu or the waitstaff leaves you feeling confused, make sure to order with these tips in mind:
Avoid the flour, starches, and desserts — This includes bread, croutons, risotto, pasta, potatoes, beans, polenta, pizza crust, etc.
