How influential is Journey to the West to Dragonball? I know Son Goku is based on Son Wukong to a certain degree.
How do the parallels run and where is it different?
Well on the more obvious front, yeah, Goku is literally named after Wukong, or his Japanese name at least. It's also the inspiration behind Nimbus, the Power Pole, the monkey tail and Oozaru form, even the shape of the Saiyan space pods is thought to be a reference to the magic stone that Wukong was born from. Goku and his mischief with the gods and quest to master Ultra Instinct (which can be read as parallelling Wukong attaining Buddhahood) are also taken from it, so the series is still drawing inspiration from the story to this day. And even some of the movies appear to borrow from it. The devices used to control both versions of Broly may be inspired by the gold circlet used to control Wukong if he got out of control in JTTW, and the fruit of the Tree of Might MAY have been inspired by the Peaches of Immortality.
In terms of other characters, Ox King is based on the Bull Demon King, Tien is based on Erlang, Roshi on Subodhi, Yamcha on Sha Wujing, Bulma and Krillin both have aspects inspired by Tang Sanzang, Oolong is a pretty direct reference to Zhu Bajie right down to being a pig-man, the list goes on.
There's actually quite a lot of JTTW in Dragon Ball's DNA.

KRILLIN'S OBSCURE CONNECTION TO SUN WUKONG
Many in the fandom often praise Goku, Vegeta, Broly, Gohan, other Saiyans, ect for their character and their inspiration from Journey To The West. And also explaining how they are homages to Sun Wukong.
I find it interesting that many in the fandom who hate on Krillin for being bald & short don't realize that Toriyama took those aspects from Sun Wukong who is often describes as short & bald.
Sun Wukong being short is possibly part of the reason why Toriyama stated that Saiyans have long childhoods & are short
So, not only was the warrior monk Krillin inspired of the monk Tang Sanzang, but also some aspects from the warrior Sun Wukong.
There are more aspects of Sun Wukong's character that Krillin has, but I haven't finished reading Saiyuki yet.
But, another aspect of Sun Wukong that Krillin has is that he was a trickster then became a clever strategic fighter as he grew older. Krillin is in a sense "the human Sun Wukong." And this connection is likely one of the many reasons why Goku & Krillin are best friends.
• Goku: Sun Wukong being taught to be like a human.
• Gohan: Sun Wukong as half monkey half human.
• Krillin: Sun Wukong as a human. (Also Krillin is a Buddhist & Sun Wukong becomes one.)
I doubt you'll ever hear or read this from any prominent DB figure in the fandom. They don't care for Earthlings and will dismiss a lot of information about them. So I'm just sharing this nugget of knowledge with those of us who like Saiyans but also like non-Saiyan characters too.
