Dalgona Coffee

I’m an avid coffee drinker and love the beverage the most when it is hot, strong and very dark. Thus, I don’t really like instant coffee, although I will drink it when I’m on a tight budget or have nothing else at hand. And somehow, I always end up bringing the complimentary packets I find in hotel rooms home! And, as I am curious by nature, and love trying new things, I’ve been intrigued by Dalgona Coffee and have wanted to make some for a while. I did today, and I quite like it! I love the thick texture of the whipped coffee and how it blends in the cold milk, and I also threw in a few cc in the milk so the taste of coffee is strong and delicious! Perfect on a hot day, when you want something lighter than an to end your lunch!

Ingredients (serves 1):

2 tablespoons instant coffee

1 1/2 tablespoon caster sugar

2 tablespoons boiling water

6 Coffee Cubes

170 millilitres/3/4 cup cold semi-skimmed milk

In a small bowl, combine instant coffee and caster sugar. Stir in boiling water until well-blended and sugar is completely dissolved.

Using an electric beater, whip coffee mixture, gradually increasing speed, until it becomes pale brown, thick, fluffy and glossy, about a couple of minutes.

Place Coffee Cubes in a tall glass. Pour cold milk over Coffee Cubes. Gently spoon whipped coffee on top.

Enjoy Dalgona Coffee immediately.

Gin Buck

Beautifully refreshing on a very warm Spring day, this Gin Buck is a simple cocktail that allows the spirit to shine as brightly as the sun! Happy Friday!

Ingredients (serves 1):

8 ice cubes

45 millilitres/1 1/2 fluid ounces herbaceous botanical gin (like Wild Burrows)

1/2 small, ripe lemon

chilled ginger beer (like Bundaberg's), to top

Place ice cubes in a Collins glass.

Pour gin over the ice.

Thoroughly squeeze the juice of the lemon halve, and pour over the gin and ice. Give a gentle stir with a bar spoon.

Top with chilled ginger beer.

Enjoy Gin Buck immediately.
