This recipe combines three of my favorite breakfast things into one: coffee cake, blueberry, and chai. This was, surprisingly, my first endeavor in coffee cake, and while I’m sure there are betters out there, this turned out pretty yum.
I will say this is not a quick recipe; it kept me in the kitchen probably an hour and a half, including bake time. There are a lot of steps that go into this, and then a pretty long stint in the oven, so that’s just something to keep in mind.
I used almond milk rather than soy, and just regular frozen blueberries as I don’t even know where I’d begin to find ‘wild’ ones. I also skipped the glaze, which is probably the reason this didn’t have much of a chai flavor; the milk in the cake mixture doesn’t do much, but, from past experience, I also wasn’t really expecting it to. In retrospect, it might have been worth swapping the cinnamon in the topping for the chai spice I have on hand to give it that extra kick.
I had to whisk quite a bit to get the lumps out here, and perhaps because of all this mixing, my batter turned out quite thick and not at all pourable; it was a challenge to even spread it over my baking tin. I didn’t quite get it all the way to the sides, but thankfully it spread enough in baking that it sort of evened itself out.
My topping caught a bit in the oven, so next time, I’ll definitely cover with tinfoil from the beginning; when I checked on it at 40 minutes, I went ahead and did so, and it definitely helped prevent the top from getting too crispy in those last 5. The center was honestly still a bit gooey when I took it out, but I was honestly too impatient to be bothered by it. And really, the beauty of vegan baking is often underbaking.
I had quite a few takeaways here, but the overall effect was mostly what I wanted. This really was so flavorful; the topping was delicious and really elevated the whole thing, and I especially loved the toastiness of the pecans within it. I’d like to try out some other coffee cake recipes before I consider returning to this one, but it certainly satisfied that craving for now.

Prom king and queen are Axle and Raymond respectfully. Before you jump on me for calling Raymond a the prom queen he wore pink to my festival so he would absolutely wear that dress to prom and slay.
