Despite recent setbacks beef is still big industry in England, and the Scottish Aberdeen Angus is one of our most famous beef-producing breeds. Dairy cattle are also farmed extensively -- England is famous for its creams and butters and for its sturdy and delicious cheeses: Stilton, Cheshire and its rare cousin blue Cheshire, double Gloucester, red Leicester, sage Derby, and of course cheddar.
Some of our more interesting dishes include:-
Beefsteak, Oyster, and Kidney Pudding: Oysters may seem unlikely in this meat pudding, but their great abundance in the Victorian age and earlier eras inspired cooks to find ways to incorporate them creatively in many different recipes. This steamed pudding combines the meats with mushrooms, onions, tomatoes, and Worcestershire, then wraps the whole in a suet pastry.
Black Pudding: invented in Stornoway, Isle of Lewis black pudding is often served as part of a traditional full English breakfast.

Cock-a-Leekie : This Scottish specialty can be classified as a soup or a stew. It combines beef, chicken, leeks, and prunes to unusual and spectacular ends.
Crown Roast Lamb: The crown roast encircles a stuffing of apples, bread crumbs, onion, celery, and lemon.
Eccles Cake : Puff pastry stuffed with a spicy currant filling.
Hasty Pudding: A simple and quick (thus the name) steamed pudding of milk, flour, butter, eggs, and cinnamon.
Irish Stew: An Irish stew always has a common base of lamb, potatoes, and onion. It could contain any number of other ingredients, depending on the cook.
Likky Pie Leeks: pork, and cream baked in puff pastry.
Mincemeat: Beef suet is used to bind chopped nuts, apples, spices, brown sugar, and brandy into a filling for pies or pasties - not to be confused with minced meat!.
Mulligatawny Soup: What this soup is depends on who is cooking it. Originally a south Indian dish (the name means pepper water in tamil), it has been adopted and extensively adapted by the British. Mullitgatawny contains chicken or meat or vegetable stock mixed with yogurt or cheese or coconut milk and is seasoned with curry and various other spices. It is sometimes served with a separate bowl of rice.
Syllabub: In the seventeenth century, a milkmaid would send a stream of new, warm milk directly from a cow into a bowl of spiced cider or ale. A light curd would form on top with a lovely whey underneath. This, according to Elizabeth David, was the original syllabub. Today's syllabub is more solid (its origins can also be traced to the seventeenth century, albeit to the upper classes) and mixes sherry and/or brandy, sugar, lemon, nutmeg, and double cream into a custard-like dessert or an eggnog-like beverage, depending upon the cook.
Trifle: Layers of alcohol-soaked sponge cake alternate with fruit, custard and whipped cream, some people add jelly, but that's for kids.
Welsh Faggots: Pig's liver is made into meatballs with onion, beef suet, bread crumbs, and sometimes a chopped apple. Faggots used to be made to use up the odd parts of a pig after it had been slaughtered.
Welsh Rabbit (or Rarebit): Cheese is grated and melted with milk or ale. Pepper, salt, butter, and mustard are then added. The mix is spread over toast and baked until "the cheese bubbles and becomes brown in appetizing-looking splashes" (Jane Grigson in English Food, London: Penguin, 1977).
Westmoreland Pepper Cake: Fruitcake that gets a distinctive kick from lots of black pepper. Other ingredients include honey, cloves, ginger, and walnuts.

Ultimate Riverhold beef pasty
The Gourmet once called pasties the most boring food in all of Tamriel, and to be honest, it's hard to argue with. That is, until I visited the city of Riverhold, in the Anequina region of northern Elsweyr. Khajiiti cuisine is some of my favourite, and their surprising twists on traditional dishes are always a delight to share with the rest of Tamriel! A fluffy pastry filled with tasty Eidar cheese and hearty chunks of beef stewed in the best Argonian Ale make for the perfect filling meal on the go, and is anything but boring- if anything, it will make The Gourmet eat his hat!
You will need:
550g beef fillet steaks, chopped into generous 1" chunks
100g Stilton or other hard blue cheese, crumbled
350g pie dough, thawed (or make your own)
2 sprigs fresh thyme
2 sprigs fresh rosemary
1 tsp dried oregano
2 tsp freshly cracked black pepper
1 tsp salt
100ml dark ale of your choice
1 tsp Worcestershire sauce
1 beef bouillon cube, dissolved in 50ml hot water
1/2 small onion, diced finely
3 cloves garlic, crushed
1 egg, beaten
Butter, for greasing
Method:
Preheat oven to 200C/392F. Grease a baking tray well with butter.
In a mixing bowl, combine the beef, ale, herbs, ale, onions and garlic, and Worcestershire sauce. Sprinkle with salt and pepper and toss until combined.
Pour in the water containing the beef bouillon. Crumble in the Stilton, stirring the mixture all the while to ensure it is evenly distributed. Set aside.
Roll out the pie dough to 1/2cm thickness. Use a 12" round pastry cutter to cut out the dough, and scoop about 3-4 tablespoons of the meat filling onto each dough round. Fold the dough over in half, and pinch the edges together tightly to seal the filling in (you should have nice crescent-shaped pastry pockets, with about 1cm edge to pinch together). Repeat until all the dough rounds are filled.
Use a fork to make light indentations along the edge of the pasties. Brush both sides of the pasties with egg to glaze, and set them widely apart on a greased baking tray so they have room to expand.
Bake for 30 minutes, until a deep golden brown. Remove from the oven to cool, wait 20 minutes before consuming. The filling will be very hot so take care when enjoying!

Chardonnay comes in several styles, and each style pairs differently with food. However, this wine features a sensual body and decadents that stands up to most flavor combinations and dishes where other wines may not. It has excellent acidity, and this helps cut through richer dishes.

Recently I was lucky enough to be invited to attend the Love the Flavour – Food and Drink Devon Awards.
The event was held at the handsome Deer Park Country House Hotel, and was attended by some of the finest local Devon food and drink producers, restaurateurs and foodie folk around.
A venue with is own vegetable garden and orchard, the menu was bound to be delicious.
We enjoyed a starter of salmon rilette, pickled cucumber, horseradish and salmon caviar. This was a delectable, smoked salmon affair, with plenty of refreshing, palate-cleansing bedfellows.
Main of peppered pork tenderloin, crackling, creamed potato, apple, savoy cabbage and pork sauce. This delectable meaty morsel was so soft and moreish, cooked to perfection with complimentary savoury elements, along with the subtle sweetness of apple. And crackling….what a piece of crackling!
Dessert was a vanilla cheesecake, apple and cider sauce. It looked simple but was texturally spot on – smooth and light, creamy yet elegant, draped in a sweet sauce for a bit of naughtiness with a delightful cleansing sorbet.
The food was a fantastic representation of local suppliers, cooked wonderfully by the Deer Park team; considering the orangery was full of approx 200 people, it certainly upholds the basis for their reputation of catering for small and large events.
So as we ate, drank and chatted with our table guests, of course the reason we were all there was to witness the announcement and award giving of the lucky foodie establishment and product winners, all the while admiring everyone that had been shortlisted, as that is an achievement in itself.
The awards were very well organised by RAW PR and Marketing, we heard from passionate chair of Food and Drink Devon, Barbara King and the comedic Nigel Barden of BBC2 Food and Drink fame was our compère and host for the evening.
Before reading the winners below, if there’s anything we want you to take from this blog post, it has to be inspiration or a to-do list. Everyone below, and on the runners up list on the website, are incredibly hard working Devon folk at the top of their game, doing what they do best, trying to mke a living whilst utilising the best of Devons larder – google them, share them, follow them on social media, take friends to eat lunch there, buy their products for a gift, or go on and just spoil yourself – but support local! They can only exist if we support them all year round whatever the occasion.
Of course if you are a local food or drink producer or restaurant, looking for support and promotion within Devon and beyond do get in touch with Food and Drink Devon to see how they can help you. The team are incredibly passionate and know a thing or two, as they have fingers in plenty of pies (excuse the pun!).
