Taco Soup
I’m probably gonna put this around a 2 out of 5 for spoons because you have to brown meat and drain cans for this recipe, but otherwise, it’s very easy! Maybe needs another spoon for putting up leftovers (because this makes a decent amount of leftovers)
Equipment:
Dutch oven (but a large pot works just fine - that’s what I use)
Something that stirs well
Optional colander for draining meat
Ingredients:
2 lbs ground meat (whatever lean/fat ratio you want)
1 pack of taco seasoning
1 pack of ranch seasoning
1 15.25oz can of corn, drained
1 15oz can mild chili beans
1 15oz can pinto beans, drained
1 14.5oz can stewed tomatoes
1 10oz can diced tomatoes with green chilis
1 4oz can chopped green chilis (optional, if you want more spice)
Directions:
In a dutch oven/large pot over medium heat, cook the ground meat until no longer pink, breaking into crumbles as it cooks; drain.
Add taco seasoning packet and mix.
Add everything else.
Bring to a boil, then reduce heat to a simmer. Cook uncovered for 15 minutes, stirring occasionally.
Additional notes:
This is a customizable recipe. For example, I leave out the beans because I don’t like their texture. Still very tasty! I imagine you could probably add extra things into the soup and have it turn out well.
Good for leftover chips that you don’t want to go stale, but it’s also perfectly good on its own.
It’s fine to reheat this in the microwave instead of putting it back on the stove - heat to your liking. Usually anywhere from 1 minute 30 seconds to 2 minutes works well for me.

Crunched out some new fashion for Procca last night so I got some screens to showcase it.
Never thought I'd use most of these pieces. It's amazing I found a place for them all.
(I WAS trying to find an excuse to use the Koda top for MONTHS. Apparently all I needed were those leggings. Who knew... )

Easy Spanish Rice
I got this from a flyer my grocery store sent out many years ago:
1 can black beans (15-16ish oz), rinsed and drained
1 ½ cups of salsa (I use medium)
2 cups cooked brown rice (which is 1 cup uncooked instant, or you can use the already cooked stuff in the pouch. If you use the pouch stuff, you might need to add more or less salsa, depending on how much rice is in the pouch.)
Start the rice cooking, either on the stovetop or in the microwave, according to the package directions. Skip this step if you’re using the already cooked rice in the pouch. Just dump it into a big leftover dish that has a lid, so you can store any leftovers.
Dump the beans in a strainer and rinse the gunk from the can off them.
Measure out the salsa.
Sit down and wait until the rice is done.
 When it is, add the beans and salsa to the pot or big leftover dish. Mix well. 
You might need to heat it a little more - put a helping in a microwave safe dish and heat it up. Eat as much as you want, and save the rest for later!
This ratio of salsa to rice is barely spicy/hot. The original recipe called for 2 cups of salsa, but I’m a weenie, so I only use 1 ½! I like to eat it with a slice or 2 of sharp cheddar cheese, which has dairy to cut the heat of the salsa if necessary.
This has tons of protein and fiber, and the salsa has all the spices already in it, so no fussing with that - and salsa totally counts as vegetables!
