Creamy Dijon Chicken Chicken dredged in seasoned flour then cooked in a creamy dijon sauce consisting of onion, garlic, chicken broth, dijon mustard (I mean duh) and just a couple splashes of rum. 😉 Since I wasn't using white wine I had to "kick it up a notch " That's right, I used @emeril brand dijon mustard and it is amazing! The sauce was bold, robust, creamy, and extremely flavorful. Apart from the fact that this recipe could use a little acid (lemon juice or orange juice or perhaps even just some diced tomato), I'm calling it a huge win and will definitely need to make it again someday! It's great for hitting those macros... especially protein! Oatmeal Souffle/Mug Cake/Thingy! Today I tried an oatmeal recipe by @toriv.fit and sent to me by @kaitlynkennafitness. It's made by blending some oats, milk, syrup, baking powder, and protein powder and then baking at 350° for 15 minutes (after adding peanut butter and chocolate chips.) Mine did not have the same consistency as her video, but I did make slight alterations. For instance: I added some PB Powder and I used coconut milk instead of almond milk (and likely too much of it.) I also used a broken up zero sugar Hershey's bar, but that's just genius on my part. 😉 You can always adjust as needed. The texture of mine was sort of like a mug cake only better. I also used Cinnamon Cookie Batter Level-1 but I think another flavor would have been better suited. Regardless, it was fantastic! Will definitely have to make it again. Perhaps I'll shoot for lower carbs in the future. 😬 By the way, I always recommend 1st Phorm protein powder and American Dream Nut Butter. Happy Oating! A saint of a person very recently told me my confidence is higher and it shows in person. I have to say, that made me pretty happy but I can't say I've noticed it myself. Normally when I seem confident online I'm just faking it and it quickly turns into cockiness. I have been feeling better, though, about myself and in general. Here's my advice to you based on what I'm doing so far: - Take care of yourself physically (collagen water, multivitamins, exercise, movement, a skin care regimen, hire a health coach, eat more protein, etc. Wherever you know you can improve.) - Get some new clothes. Maybe a nice suit. Express yourself. When you look good, you feel good. Don't be afraid to get a female's perspective. - Get real cologne. Don't rely on Axe body spray and the cheapest aftershave you can find. Play around with some scents to find what suits you. - You must also take care of yourself mentally and spiritually: pray, visualize the life you want, go to church, practice gratitude, rest, read self improvement books as well as some good fiction, allow a little time for video games, etc.) - Make yourself go do something new and fun on the weekend or whenever you have free time (or make some free time by getting up early.) Invite others but don't expect them to come and don't make that a condition of whether you have fun or not. Enjoy the day no matter what. Don't let the news, mayor, or anyone tell you you can't go out and have fun. There's options. - When someone pops in your mind, do something nice for them. You could buy them dinner, send them a quick message letting them know how much you care about them, etc. - Treat yo self. - Be present with company. Focus on them and their needs and thoughts, not your own. Don't be distracted by your phone or all the things on your To Do List. - When all else fails, eat your favorite food and wash it down with a cold beer then make tipsy TikTok videos. I've got a lot of work to do on myself still, but if you put some of these things into practice I promise your life will begin to improve. You'll be happier and people will notice. One Pan Baked Salmon and Garlic Aspargus Members of the FB group and Snapchat saw it first. This is my execution of a recipe sent to me by @queenshroomy. Salmon, asparagus, everything bagel seasoning, and a whole mess of Irish butter (why have I not been using this before??) and garlic. I like my salmon a little sweet so I decided to add some cinnamon sticks for the cooking process. Because I was using smaller portions I overcooked everything a little bit. I also wish I had made some yum yum sauce. Apart from these minor things, though, this was absolutely phenomenal! A huge win. I needed another comeback after the lamb chops fiasco haha. I will definitely do this more often and you should too. The Great Blue Lamb Chops! I always like to point out when I make mistakes. One, because we are our own worst critics and I always feel like I deserve to be shamed sincd I know I have what it takes and I failed to execute. Two, because I think it's vitally important to acknowledge when we do so that we remind others that no one is perfect all the time. Everyone out here messing up sometimes. I went into the kitchen with ambitious ideas, hopes, and a dream. I had planned to reduce a cranberry sauce and turn it into a sort of glaze for candied lamb chops. Unfortunately, I used way more blue Mountain Dew (yes, you read that right) than anything else. I also didn't use any ingredients that would allow the sauce to thicken. I had envisioned a sort of reddish pink cranberry glaze. Instead, I yanked some chops out of the (surprisingly good) liquid that were completely blue. We're talking Zordon blue. We're talkin' ocean blue. Now that's Smurfing blue! Like any good cook, I tried hiding my mistake in some parsley... which I promptly spilled on the floor. It didn't matter anyway. The damage was done. They were overcooked chops and did I mention they were blue? At that point, I was as well. The best thing on the plate were the mashed potatoes... and they were Betty Crocker! No worries. I haven't given up on my dreams. I'll be cooking up a storm again soon. Practice makes perfect. And that, my friends, is the point. We don't give up. Cinnamon Roll French Toast Made with sourdough bread for the authentic experience. The batter contains eggs, almond/coconut milk, vanilla (calorie free) syrup, cinnamon, and 1st Phorm's Level-1 Cinnamon Cookie Batter protein powder. I also infused a little bit of @pedaljava cold brew. Then the toast was cooked in a bit of Irish butter (yum!) Served with a side of two strips of turkey bacon and an assortment of fruit (which admittedly was leftover from Chick-fil-A.) Just an overview of the Washington County Fair. I thought it was a neat pic. I suppose it's due to the bright, fun colors and the image depicts what I was hoping to find. It was sadly underwhelming for me as I'm trying to avoid things like fried cookie dough and because all the games were for kids. Still, it's a reminder to me that there is beauty all around us. In the end, it's also a reminder that fun is a mindset.
