I think Episode 2 resolved the small plothole of why Loki, overall, speaks in a more modern way in the TVA than he did in the first two Thor movies and the Avengers--he's just code-switching, very well!
The TVA members talk like modern humans, and around them, he mostly talks like a well-educated modern human (with some touches of an older manner of speech).
But as soon as he's talking to "Variant Loki," he starts talking more like a typical Asgardian: he uses no words or phrases that would only be used by modern humans ("cards on the table" "has been in use since the year 1800" [Source: theidioms.com]), and he uses old-fashioned grammar: "What say you?"
(As an aside, "Variant Loki," contrary to Loki's seeming expectation, does not talk like an Asgardian, which would fit nicely with her being Sylvie Lushton, who is a modern human.)
