single-serve shortcut ratatouille聽
1/2 eggplant聽
1 tomato聽
1/2 potato聽
2 tbsp olive oil聽
italian seasoning (oregano, basil, thyme, rosemary)聽
1/2 cup marinara sauce (I used the one from costco)聽
salt & pepper聽
can add zucchini, bell pepper, squash, etc.聽
preheat oven to 180 C聽
cut up eggplant, tomato, and potato into thin, circular pieces聽
pour marinara sauce into an oven-safe dish and arrange ^ the pieces on top聽
in a separate bowl, mix olive oil, italian seasoning, and salt + pepper聽
pour ^ this mixture on top of the veggies聽
cover with aluminum foil or a baking sheet and bake for 40 mins聽
take the cover off and bake for another 20 mins聽

spinach banana yogurt smoothie聽
1 ripe banana (frozen but if not, just add some ice instead)聽
1/3 cup greek yogurt
large handfuls spinach (like 2 cups)?聽
some water or milk to thin it out聽
blend everything together but start with the frozen banana and spinach with some water/milk because they鈥檙e the hardest to blend聽

oatmeal lemon bars聽
(not a flaky buttery crust vibe because there鈥檚 no butter lol but a very creamy, chewy ~indulgent~ kind of lemon bar)聽
crust
1 1/4 oat flour聽
1 tbsp brown sugar
1/4 tsp salt聽
3 tbsp avocado oil
2 tbsp maple syrup聽
a few tbsp water聽
lemon filling聽
1/2 cup maple syrup聽
1/2 cup oat flour聽
1/3 cup lemon juice (juice from 2 lemons)聽
4 eggs聽
a pinch of salt聽
preheat oven to 180C
mix the ingredients for the cup and add a few tbsps of water, enough to make the dough come together but not too sticky聽
lay the crust mixture on a baking pan and flatten it out with fingers聽
bake for 10~12 mins and let cool while making the filing
beat the eggs and mix well with the rest of the filling ingredients聽
pour the filling mixture on top of the crust
bake for 35~45 mins or until the filling is set/not runny聽
cool for 1 hour and then store in fridge in an airtight container (makes around 12 pretty sizable lemon bars)聽

mushroom & chick quesadilla? pizza? kinda thing聽
1/2 whole wheat tortilla
1 cup mushrooms
50g chicken breast
1 cup spinach
1/2 cup shredded mozzarella
salt & pepper
can add pepper flakes and hot sauce
dice chicken breast and mushrooms聽
grill chicken breast and mushrooms on a frying pan until brown. season with salt and pepper聽
set the chicken and mushrooms aside and place the tortilla on the pan聽
wait until one side of the tortilla is toasted and brown, then flip聽
add the grilled chicken, mushrooms, and cheese on the tortilla聽
cook the spinach on a side of the pan until wilted. season with salt and pepper聽
once the cheese is melted, add the spinach and serve with optional pepper flakes and hot sauce聽

1 slice smoked salmon聽
1/2 avocado聽
100g grilled chicken breast聽
salt & pepper聽
can add baguette, cherry tomatoes, other bread or veggies聽

protein cinnamon roll granola聽
2 cups oats聽
1/4 cup maple syrup
1/3 cup peanut butter聽
2 scoops protein powder (i used gold standard whey double rich chocolate)聽
1/2 tsp salt聽
2/3 tbsp cinnamon (i think 1 tbsp would be good too)聽
can add nuts, shredded coconut, honey, chocolate chips, etc.聽
preheat oven to 350F or 180C聽
mix all ingredients together聽
spread mixture on a baking sheet and press it down flat with a spoon or spatula聽
bake for around 15 mins聽
let cool completely (or else it won鈥檛 be crunchy) and store in an airtight container聽

peanut butter protein oatmeal cookies聽 (a soft~chewy cookie that鈥檚 only slightly sweet. basically peanut butter oatmeal with better texture)聽
1/3 cup oats (I used quaker old fashioned oats)聽
2/3 cup protein powder (I used gold standard whey double rich chocolate)聽
1/4 cup brown sugar聽
2 eggs
3/4 cup peanut butter
1/3 tsp baking soda聽
1~2 tsp cinnamon聽
can add chocolate chips, nuts, 1 tsp vanilla extract, 1 tsp salt, other spices, etc.聽
preheat oven to 350F or 180C聽
mix all ingredients together
no chilling needed聽
bake for 10~12 minutes聽
made 15 smallish cookies聽
