Shrimp Salad. This salad has sautéed shrimp in lemon, pepper, and garlic. The salad also has kale, spinach, iceberg lettuce, onions, mushrooms, and tomatoes. I made a dressing using olive oil and the pan juices from the sautéed shrimp.

Something strange started happening to my Peanut Butter and Jelly Cookies once I took them out of the oven! They started growing eyeballs! I think they're being possessed! I better eat them first before they eat me instead! Have a safe and Happy Halloween everyone! BOO!

This mid-week dinner could have used a bit more color, but the bold flavors made up for it big time. These were "No Knife Needed" Braised Pork Country Ribs with a light Red Wine Gravy and Basmati Rice with Sweet Peppers. The diced peppers were for texture more than anything, and the braise on the pork was low and slow after a good strong sear. I marinated the pork overnight in a standard AP rub and olive oil. Have a safe rest of the week everyone!
