Depends on the timeline. Always depends on the timeline.

If we talk about Anor Londo’s golden age, Ornstein was notoriously ruthless, unwavering and remorseless, no matter how horrifying his deeds were while being the Gods’ chief Knight. Genocide, indoctrination, annihilation of entire cultures deemed heretic… he acted under Gwyn’s orders, but also of his own accord — he had that freedom and he used it. All for the realm’s sake, of course. Yet this was a realm built upon death and destruction from its very beginning.

The only regret and shame he felt had to do with his past: he used to be a filthy thief and someone unworthy of any grace.

Once his glorified vision of the Lords and the Gods shattered; a slow, difficult and painful process, he was left with a growing sense of guilt and the harrowing realisation that they had ruined the entire world. No excuses there, nor would he ever try to justify himself. This was a crime beyond redemption or repair. Simple as that.

Funny how his dream as a young adult (whilst fighting against the dragons) was to build a world where he could find the safety and peace he never had as a child. That was all Ornstein wanted. Instead, he ended up with a plethora of endlessly blood-stained glory and duty so dreadful that it ate away at his heart and soul. The latter quite literally, since his soul would decline along with the Flame and kill him in the end. He regrets this particular mistake, but… he also believes a miserable death is what he deserves for his actions, so he wholeheartedly accepts it. Reasons why, after leaving Anor Londo, he would never again do a single thing to rekindle the Flame — let the fire die, along with himself.

There are so many other regrets, but what eventually allows Ornstein to continue living is his ability to embrace the good and bad in order to adapt, being the sole survivor of his fellow knights and one of the very few left of his pseudo-divine kind.
