I've been chasing a homemade tortilla recipe that uses masa and flour and today I got it right.
1. With butter and salsa
(Eating one this way brings me back to the first time I ever had a homemade tortilla so this is how I do my taste test.)
2. Recipe math (with a mistake in division! It's correct in the recipe below.)
3. Dry ingredients plus bacon fat mixed together with a dough whisk
4. After adding Greek yogurt and kneading until just combined
5. Tortilla press results
6. Cooked tortilla
Based this off the #recipeclub yogurt tortilla recipe.
92 grams masa
118 grams flour
1 tsp salt
1/4 cup fat (I used bacon fat)
2/3 cup yogurt
Masa+flour+salt+bacon whisked together so it is in rice sized pieces. Add the yogurt (you may need more to get it to come together). Knead a few times (the recipe says to flour the surface, I did not do this.) Let rest for 10 minutes covered with a wet towel (it needs this step for hydrating, especially the masa). Pinch off golf sized balls and go at it with the tortilla press. Cook on a non stick or cast iron skillet.
Pro tips: salt is totally up to you. The original recipe definitely did not have enough salt, I tried to find a happy medium. You'll get to the point where you can feel whether the dough is hydrated enough.

Those crazy kids at @kingarthurbaking just dropped a bunch of variations on their #coffeecake #recipeoftheyear. I was very intrigued by the sweet corn blueberry version that uses #masa in the crumb and the cake. So I made it and it's delicious. Next time I'll use a 9 inch round instead of an 8×8 pan and maybe play with the crumb by adding walnuts. #recipe #baking #organicbaking

Leftover Easter candy always ends up in a baked good. New blondie recipe that is a little aggressive with the espresso powder and salt but if you are into the sweet/salty thing you will love.

INGREDIENTS
3/4 cup unsalted butter, softened
1/4 cup granulated sugar
1/2 cup ube flavored sweetened condensed milk
1 teaspoon ube flavoring (I used Butterfly brand)
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup white chocolate chips
PREPARATION
Preheat oven to 350°F and line a baking sheet with parchment paper. Set aside.
In a large bowl, beat together the butter and sugar with an electric mixer until light and fluffy. Add the sweetened condensed milk and vanilla and mix until combined.
In a separate bowl, mix together the flour, baking powder, and salt. Add dry ingredients to butter mixture and mix just until combined. Stir in chocolate chips.
Roll dough into 1-inch balls and place 1 1/2 inches apart on prepared baking sheet. Flatten balls slightly with your hand.
Bake until edges are slightly golden, about 10 minutes. Enjoy!

I keep seeing really good noodle posts using the @momolongplay soy scallion noodles so I had to hack something together. I made some miso butter and busted out the ginger + garlic mixture that is always in my fridge. The gulf shrimp (from @imperfectfoods) was marinated in soy sauce + sweet rice cooking wine + sesame oil + cornstarch. While the noodles were cooking I started the ginger and garlic in the wok, added the shrimp and miso butter. Once the noodles were done, I added them to the wok, along with the soy and scallion packets. Then the #broccoli at the end. It's pretty delicious, especially the carmelized coating on that shrimp.
Pro tip: some sambal oelek or chili crunch would be really good with this. I had to settle for some red pepper flakes.

The results of my Flavored by Philly Herrs potato chips taste test are in!
First up, the wiz wit. I forgot to photo the description but it's supposed to taste like a cheesesteak with onions. It's cheese forward with a little onion going on. Didn't really taste the meaty part. But I liked and would buy again.
Second up, the long hots. TLDR version is the peppers on your hoagie along with the cheese. I don't put peppers on my hoagie (old person heartburn sucks) but definitely get that vibe eating these. The heat sneaks up on you! I ended up putting some of these on my hoagie when I was eating. A delicious flex. Would definitely buy again.
(P.S. there's a disclaimer on the Long Hots about a bioengineered product in them. There wasn't one on the Wiz Wit. Not a deal breaker for me but maybe to you so had to point it out!)
Both get thumbs up! Go forth and eat some potato chips!

The homemade #nutella recipe is at a point where I can share. I've been eating this with pretzels but tonight I toasted a little baguette.
Ingredients:
8 oz raw hazelnuts
1 cup powdered sugar
1/3 cup unsweetened cocoa powder
1 tsp vanilla
2 tbsp canola oil
1/4 cup melted chocolate.chips
1/2 tsp salt
Preheat oven to 375 degrees. Roast the hazelnuts for 10-15 mintues or until they are toasted but not overly toasty. (You should be able to smell when they are done.) Let cool and then use a clean kitchen towel to rub the skins off. A little skin is ok but the majority should be off after a few rubs. Place the hazelnuts in a food processor and process until it starts to liquefy. Then add the cocoa and process until combined. Add the powered sugar until it combines. It should be a little crumbly at this point. Add the vanilla and then stream the oil in.. Once combined, add the melted chocolate and mix until incorporated. Taste it and start with 1/4 tsp of salt. Process and taste again. It may be ready depending on how salty you like it. If not, add the rest of the salt and taste again. You can add more salt or if it's too salty you can add a little more chocolate and/or powdered sugar. Store in the fridge but take it out a few minutes before serving and make sure to give it a stir. Enjoy!

My second attempt at #padseeew and it was much better than the first time. I saw that I could get these noodles from @imperfectfoods so I gave it a go. My first attempt failed because I didn't have Black soy sauce but I was in San Diego recently and grabbed some at @hmartofficial. Progression is the velveted chicken (not in the recipe but I am doing this for all chicken stir frys going forward.) After the chicken is mostly cooked, add the broccoli and then fry the eggs, mix together then remove. Then the sauce with the noodles until the sauce reduces. Once they start to carmelize, add everything else back in. Pro tip: a little #sambaloelek to spice it up is a good thing. Full recipe on my #fuckyeahthisfoodrawks tumblr. #homecook #dinner #thaifood

Feeling pretty good about the #cashewchicken #recipe so I am sharing. I started with #velveting technique where you marinate the chicken for an hour using 1 tbsp cornstarch + 1 tbsp soy sauce + 1 tbsp toasted sesame oil + (insert however many cloves of garlic you want, I used 6) per pound of chicken. Meanwhile toast the cashews (I use the toaster oven) and let them cool. Then make the sauce:
1/4 cup hoisin
1/4 cup soy sauce
2 tbsp sweet rice cooking wine
2 tbsp Worcestershire sauce
2 tbsp honey or sugar
After the hour, heat up your pan (wok, whatever) with some oil and cook the chicken until browned. Then add the cashews and cook for a couple more minutes (depending on how well you toasted them it may not need much). Then add half of the sauce and saute a bit more until it thickens. (You may not want to use all the sauce, I like mine less saucy.)
I added green beans (that I roasted in the oven) near the end so they got coated with sauce.
Pro tips: I'm fish sauce sensitive so I used Worcestershire sauce instead. Guessing oyster sauce might work too but I'm allergic. Sigh.

Blueberry biscuits for breakfast. The dough was a little wet so I didn't cut them before baking. Still turned out great (though a little browner than needed but I like that crisp.) I forgot about the lemon glaze until after I cut myself a biscuit but just imagine it's still there to get the glorious result. (Inspired by a @whitelily recipe with a tweak here and there.)

Ever miss something off a restaurant's menu so much that you have to hack your own version? I was the saddest when Momofuku took the spicy cold noodles (with chinese sausage and candied cashews) off their menu. I figured I could replicate the spicy spinach pesto-like sauce and the cashews. But I was really intimidated by the sausage part of this dish. Fast forward to when I was going through recipes from Chef Sheldon Simeon's Cook Real Hawaii cookbook. I thought that the Portuguese sausage recipe might be a good flex. And voila! Success!

Peach and cream cheese cake from Snacking Cakes cookbook. This cake was all the rage in the Food52 cookbook club so I had to make it. You're supposed to use berries but I have a lot of Georgia peaches🍑 from @thepeachpelican so that's what I made. This cake is pretty good but not sure why there wasn't cinnamon or something else in it? I'd even flex with some almond extract. Definitely making this again with some tweaks. #
